Oats- Maida Goli Bajo/Fritters/ Bajias.


"Oats- Maida Goli Bajo/ Bajias/ Fritters” served with Gulkand Chai/ Rose Preserve Tea ... tried our own goli bajos for a change by adding on some coarsely ground oats ... not gol gol, but very soft, spongy and tasty bajos ... served it with tomato ketchup (store bought) and steaming hot gulkand tea ... praying for safety of all from Nisarga Cyclone ... Do stay within safe premises till the calamity passes off ... God Bless All ... 

** Come Winter or Rainy Season and it makes one crave for deep fried snacks with some hot beverage to sip on. Though the monsoon season has really not yet started in Mumbai, the situation this year is totally different. The whole world is under crisis with Covid 19 and India is reeling under a lot of other health related pressures too. Added to the problems is Cyclone that has surfaced as always when monsoon is nearing. Presently Nisarga Cyclone is supposed to hit on the coastal sides of Mumbai precisely near Alibhag and the whole or Maharashtra and Gujarat may also get affected by the same is what the warning has been given on to us. God knows how we will get out of all this mess both physically and mentally. There is nothing one can do except pray and meanwhile keep normalcy intact to avoid the mind getting affected with wrong thoughts. The family should keep in mind the welfare of all members and for that the best way is do what you would have done on normal days. 

** Goli Bajo is a traditional Amchi spongy fritter that is often served as a snack and is a delight to have with hot cup of Coffee/ Tea. It is every Manglorean’s Favorite snack and I still remember the aroma of these Bajo’s Mom used to prepare when we arrived from school drenched. Today I gave a twist to the normal goli bajo/ baje with addition of Oats flour and they turned out awesome and even spongier. Relished them with hot steaming cup of Gulkand Chai/ Rose preserve tea. I served it with Tomato Ketchup (store bought) though it would have tasted great with some coconut chutney, but I did not want to waste much of ingredients considering the present condition of grocery availability. Also there should be some satisfaction when it comes to meals in times of crisis and not go overboard only to regret later. Do try out this snack whenever possible and enjoy them hot with your family, children always love fried dishes, specially goli bajos, the spongy fritters happen to be their favorite. 

** Here is my simple recipe for "Oats- Maida Goli Bajo/Fritters” … My Style ….

** Ingredients :
Maida/ APF : 1 Cup 
Oats : 1 cup ground coarsely in mixer grinder.
Besan / Bengal Gram Flour / Chane peeta : 2 tablespoon (Heaped)
Cooking Soda : a large pinch.
Ginger/ Adrak/ Alle : ½ inch grated or cut into fine pieces.
Green Chillies/ Tarni Mirsanga/ Hivi Mirchi : 5-6 chopped very fine.
Curry Leaves/ Kadipatta/ Karbevu : 8-10 finely chopped.
Hing/ Asafoetida Powder : ½ tsp
Curds/ Dahi : 2 tblsp 
Salt/ Namak/ Meeta : to taste
Water as required

** Oil for deep frying. 


** In a wide stainless steel bowl, add in maida, coarsely ground oats, besan, hing powder, salt to taste, cooking soda and mix well. 

* Beat the curds with ½ cup of water. Add this to the flour mixture above along with grated ginger, green chillies pieces and mix well. 

** Add in more water if necessary to bring the mixture to a smooth creamy texture without any lumps. Be careful the batter should not be runny. 

** The mixture should be thick or else the goli baje will soak in oil while frying. Keep it aside covered at room temperature for 30 minutes.

** Heat a medium sized thick bottom kadai with plenty of oil (around 4-6 cups). When it comes to smoking hot, reduce the flame to medium and wait for 5 mins. 

** Take a small pinch of the dough and drop in the oil, if it comes up round and nice within few minutes it means the oil is of correct temperature for frying. Keep the temperature even throughout frying of the baje/bajo’s. 

** Drop small balls of the prepared batter making it into round shape with the help of your fingers and running the dough on the rim of the bowl. Fry 6-8 balls at a time (the no. of balls depends upon the size of the kadai). 

** Keep stirring the balls/ bajo’s and rolling them to fry evenly on all sides. When they become evenly browned and crispy, remove on an absorbent paper for the excess oil to drain off. Prepare the remaining dough similarly by frying them in batches till done. 

** "Oats- Maida Goli Bajo/Fritters” are done and ready to be served. Always serve them hot from kadai with some chutney or tomato ketchup or any other side dish of your choice. In my home we usually relish it with store bought ketchup but it tastes great with coconut chutney. 

** Goli Bajo' Baje's always taste awesome during winter/ monsoon season when there is chill in air. It is great to relish them with a cuppa of hot drink. Do prepare these delicious Goli Bajo’s and Enjoy with family and friends. 

** I assure you, you will see all smiling faces around you when you serve them. I myself was really surprised with the change in the texture of the bajo, they turned out really spongy. It really did take the Goli Bajo altogether another level and we enjoyed it very much.
