Lychee/Litchi Juice.


"Lychee/Litchi Juice" ... a simple juice loaded with healthy nutrient benefits ... sip on chilled for morning break with some roasted chana (store bought) to munch on especially if you want to beat the summer heat ... Yummilicious ... 

** Lychee/ Litchi as you all know is a delicious summer fruit with soft opaque colored flesh within a thin red skin and a thick maroon seed inside. The fruit is peeled and the outer skin and the inner seed is to be discarded and only the whitish fleshy part is edible and can be prepared into quite a few dishes. The fruit is usually used for juice, ice creams and other desserts. The fruit has immense health benefiting properties which you can find out browsing through the net and it does have some not so good properties too, so should be eaten in limited quantities only. 

** This fruit is available for limited period just on the onset of monsoon and should be consumed within a day or two or maximum 4 days as it is perishable. I bought quite a few dozen on my way back from the outskirts of Mumbai when I had gone on official trip so making best use of it back to back. These are sweet and best eaten as it is as I find that the flavor gets lost on cooking which is what happened when I prepared sheera with it. However in case of juice the flavor remained lovely and was a delight to sip on with some roasted chana/ gram to munch along with. 


** Here is my simple recipe for "Lychee/Litchi Juice" … My Style … Do try out this simple juice and enjoy when they are available. 

** There is nothing elaborate as such in preparation of this juice. I just peeled off the outer skin and removed the inner whitish opaque fleshy portion, discarded the innermost seed. Add the edible fleshy portion into juicer grinder along with a few ice cubes and sugar to taste and run it till well blended. Remove and sieve through a slightly larger holed sieve into a vessel. Check the consistency, if you find it too thick you can add in some water and mix well. 

** Note : Do not add water while blending as lychee flesh contains plenty of water within itself and may turn out thinner in texture. Best to grind it with sugar and a few ice cubes (optional) and then add if necessary only. 

** "Lychee/Litchi Juice" a delicious healthy juice is done and ready to be served. Serve them in medium sized glasses immediately to maintain the health benefits within as on storing it somehow loses lots of nutrients. All fruit juices are always best served immediately on preparation. You can however serve it topped with a few ice cubes if you want to relish it chilled. Served with some snacks to munch on this is definitely a great mid morning break of healthy juice ... ready to make all charged out for more work all over once again.
