"Potato~ Sweet Corn~ Oats Grilled Tikki with Sweet~ Spicy Drumstick Leaves (Moringa/ Mashing Pallo)~ Amla (Avalo/ Gooseberry)~ Alle' (Ginger/ Adrak) Chutney" .... a delicious tikki with the added goodness of corn and oats and served with nutritious chutney .... A yummy combo that is sure to be a hit at parties .... Go ahead and try them, you will surely love them ....
** This a very simple and nutritious tikki that is I tava fried on grilled tava. Tastes delicious when served hot with any chutney of your choice. The tikki is healthier and I am sure your family will love it specially children as they love snacks very much. You can also prepare this prior and store it in the fridge if you have guest coming over and tava fry them just before serving too. Try these healthy tikkis as I have not only added on sweet corn kernels coarsely crushed but also oats which is really good for health. I will straight away move on to the making of these tikkis recipe, without wasting much of time. Do try them out they are simply awesome and yumz.
** Wash and scrub 2 medium sized potatoes well and put them in a pressure pan with sufficient water and pressure cook to 3-4 whistles. Let the pressure fall on it own, remove and allow to completely cool and then gently peel off the skin. Put it in a wide bowl and keep it ready aside.
** Boil one cup of sweet corn kernels or rinse them under water and microwave for 3 minutes. I microwaved them, you can add a little bit water and cook in a kadai too. Do not use excess water, just enough to cook. Once cooked, cool them completely and then add them into a mixer grinder and grind to a coarse paste without addition of water. Just one or two rounds and they are done. Remove and add it into the bowl of potatoes.
** Roast 2 cups of oats in a kadai on low heat till just about hot enough, do not turn them reddish or burn them. Just heat them for 3-4 minutes and allow to cool. You can use microwave method too like me. I spread it evenly on a glassware plate and mw for 1 minute mix well and then for 30 seconds an it is done. Once it has cooled down put it in a dry mixer grounder and powder it to a rava consistency. Keep this ready aside.
** Mash the cooked potato in the bowl well taking care to see that there are no lumps along with the added on coarsely ground corn. Both should be well mixed. Please do not add in any water, there is enough in the potato and corn. Now add in salt to taste, 1 tsp of red chilly powder, 1 tsp of coriander powder, ½ tsp of garam masala powder, ½ tsp of jeera (cumin) powder, ¼ tsp of fennel powder, pinch of ajwain, ½ tsp of ginger paste, ½ tsp of garlic paste and mix well.
** All the masala powders should be mixed well and evenly with the ingredients. Now add in a tablespoon of rice powder and approximately about half of the ground oats powder and mix well. Try to bind it well and check if you can form an smooth ball, it should not be sticky when you press it to make tikki or stick to your hands. If so add in some more of the oats powder and bind well. Keep doing so till you get the correct texture to form tikkis.
** Note : Do not add all the prepared corn powder in one go, keep adding as you bind the mixture. The addition of oats powder depends on how soft you potato-corn dough is. You may need all or lesser of the powdered oats, so be careful while adding and keep adding and binding to get correct texture. Do not worry if the ground powder remains, you can use them later if you store them in airtight container while preparing other dishes.
** Form large lemon sized balls out of the mixture and press them to form round disc shapes. Remove equal quantity of mixture to prepare the tikki so that you get evenly sized tikkis. Keep them ready formed into shape. If the mixture is in excess you can put them in an stainless steel box and put it in the fridge and use later or the next day too. It remain good for a day if kept in fridge immediately.
** In a plate add in a few teaspoon of fine chiroti rava. Add a pinch of salt and a large pinch of red chilly powder to it and mix well. Now roll the tikki on this to evenly get coated with the rava on all side. Heat a grilled pan or plain tava, when hot apply some oil on it and place the tikki and tava fry on medium heat till evenly and well crisp coated. Press it down with little bit of pressure with a flat spatula to get those grilled marks. Sprinkle some oil on top and sides before flipping them over to cook the top side. Once they are crisp and done remove on absorbent paper and allow excess oil to drain. Serve them hot immediately.
** "Tava Grilled Potato~Sweet Corn~Oats Tikki" are done and ready to be served. I served them with "Sweet~Spicy Drumstick Leaves (Moringa/Mashing Pallo)~ Amla (Avalo)~ Tender Ginger Chutney" and it was a delicious combo. You can serve with any chutney of your choice or also add on some tomato ketchup or serve the same with it.
