Spicy Beans Sukka Masala With Onion And Garlic .....
Beans / String beans sukka was born out of my immagination. I always wondered about the sukka bhaji served in Thali at Restuarants in Mumbai. It had a coarsely ground textured masala sparingly covering the vegetables. Here I just added amla while grinding as it is plenty in season. You can add tamrind while grinding or bimbul too. The dish tastes awesome with roti / pulka / parathas. This is a semi dry dish, so use water sparingly while grinding the masala lest it looses the texture. The recipe is really simple and can be prepared fast.
String and cut about 500 gms beans into 2 inch length pieces, wash, drain and keep them ready aside. You can use any other vegetable of your choice too.
To be ground into a coarse paste : Grind one cup of fresh coconut with 5-6 red chillies, 1-2 avalo / bimbul or a small piece of tamarind and 6-8 garlic to a coarse paste with as little water as possible. Keep this ready aside. Do not add in more water, as the dish is a dry masala dish.
Heat 3 tblsp of oil in a thick bottomed kadai and add 2 finely sliced onions and fry till they are slightly brownish. Add in the beans, sprinkle some water, mix well, cover and cooked till 80% done. Add in the ground masala, salt to taste and mix well. Cook till done. Serve with paratha or chapati ..... tastes yummy.
** Note : You can use brined Avalo / Amla too. Just soak them overnight in plenty of water and keep changing the water 2-3 times. This is to remove excess salt. Also check the salt in ground masala before adding in extra salt to the bhaji.
