** Again, as I mentioned earlier, Drumstick Leaves / Moringa / Mashinga saanga pallo are very well known for its health benefits and are a store house of vitamins and minerals. In Maharashtra the next day to Gokulashtami / Krishna Janamashtami ie on the day of Dahi handi the day the matka filled with curds are broken as a tribute to lord krishna’s childhood activities, it is a must to prepare a dish using these leaves. So today, I prepared two dishes using the same one was batate upkari / usli / bhaji and the other is tambuli. The bhaji is very easy to prepare similar in lines with our very own amchi usli or plain potato sukhi bhaji prepared to serve with poori. I prepared the same and served with triangle folded parathas and they tasted simply awesome. Without running much into details as I will only be wasting time, I am straight away going ahead with the simple recipe. Do try this out and serve to your family as they are very good for both growing children and aged people, with loaded health benefits. They taste too good and can be taken in lunch box or sent in children tiffin box.
** Here is the simple Method of preparing the “Potato~Drumstick Leaves(Moringa) Bhaji” ....
** Pick about 2 cups of drumstick leaves / moringa / mashinga saanga pallo, wash, drain and roughly chop it and keep it ready aside. Do not use the stick portion, we need only leaves.
** Wash 2-3 large sized potatoes well and put it in pressure cooker with plenty of water and pressure cook to 3-4 whistles. Allow to cool down completely. Once it has cooled down, open the lid and remove the potatoes, when able to handle them, gently peel off the skin and cut them into medium sized cubes and keep them ready aside.
** In a thick bottomed kadai heat 1 tblsp of oil, when hot lower the heat and add in 1 tsp of urad dal, when it slighltly changes in color add in ½ tsp of jeera (cumin seeds), ½ tsp of mustard seeds (rai/sasam), pinch of methi seeds (fenugreek), ½ - 1 tsp of hing powder (depending upon its aroma), pinch of haldi powder (turmeric powder), 4-5 finely chopped green chillies, 8-10 curry leaves and fry for a few seconds.
** Now add in the drumstick leaves (moringa/mashinga sannag pallo) and mix well. Cover and cook till almost done. Once the leaves have almost cooked add in the potatoes, salt to taste and mix well. Cover and let cook together for another few minutes. Finally add in 3-4 tblsp of freshly grated coconut and mix well. Again cover and cook on low heat for 5 minutes, mixing well in between. Remove from fire and add in the juice of freshly squeezed one small sized lemon and mix well. Done.
** “Potato~Drumstick Leaves(Moringa) Bhaji” is done and ready to be served. I served it with triangle folded (layered) parathas along with other dishes and it tasted simply awesome.
