Sweet and Spicy Oats-Rava- Banana Pancakes/ Polo/ Dosa.

Thanking all my friends for your constant support to my Blog, Page and to Konkani Delicacies my food group ... starting today's day on a sweeter note as KD completes 3 glorious years ... my experiments in kitchen with addition of Oats to different dishes continues ... here is a delicious spongy pancake ready for all ... serve it with butter (loni) or honey (mhovu) tastes great ... Stay Safe- Stay Blessed ... Yummilicious … 

** Today I prepared a dosa/ pancake/ polo with addition of "Oats" and I must say it turned out splendid. Somehow I have noticed that addition of oats gives spongy texture to dosas, it happened so when I had prepared egg omelettes sometime back too. Well for today it’s a Vegetarian pancake using rava and banana along with oats. I used the easily available Oats from Quakers in stores and I have neither roasted it nor powdered it for this particular recipe. I am sharing the recipe straight away without running into much details as somehow the world being still under the pressure of Covid-19 Virus nothing seems to touch hearts nowadays and I am somehow at a loss of words while writing. However, I encourage all to be positive as this is just a bad phase and will pass off too with God's grace. We need to remain strong and help those in needy as much as we can by supplying some food so that nobody stay hungry. Together We Will- We Can- We Should ... ** Here is my simple recipe for "Sweet and Spicy Oats-Rava- Banana Pancakes/ Polo/ Dosa" … My Style …. 


** In a large wide bowl, peel off the skin of 2 large sized ripe bananas (I used Cavendish variety) and mash it well with a fork. See to it that there are no lumps. Now add in half a cup of beaten curds, 3-4 tblsp of sugar powder, salt to taste and mix well. 

** Now add in 1 heaped cup full of Oats (no need of powdering or roasting, just add it as it is), about ¾ to 1 cup full of Bombay Rava, 3-4 finely chopped green chillies and mix well. Add in water if necessary only. The texture should be like that of thick dosa/pancake consistency. 

** Cover the prepared mixture and keep it aside for 15-20 minutes so that the rava and oats both gets soaked in well. This step is necessary and should not be avoided as both rava and oats will get well soaked in the liquid which will give a spongy texture to the dosa. 

** Once the batter has settled, check out the consistency of the mixture, if required add water, it should be of thick pouring consistency. If thinner in texture you can add in a tablespoon or two or rava and mix well. Now the batter is ready to be prepared into pancakes. 

** Heat a tava, when hot sprinkle some ghee, spread well with a tissue paper taking care to see that you do not remove it all. Now pour a cup full off the batter with a spatula in the center of the tava and gently spread it into a small dosa of about 6-8 inches in size. 

** Keep the batter slightly thicker like that of set dosa/ surnali etc. Sprinkle some red chilly flakes on top of the dosa (Optional) and let cook on medium to low heat. Add in a few drops of the melted ghee on the sides and the top of the dosa too, let cook. 

** When the top side of the dosa is cooked gently loosen it on all round the sides and then flip it over and cook on the top side too. This pancake is cooked on both sides. Do be careful when you flip it over as the dosa is super soft in texture and may break if not handled carefully. 

** "Sweet and Spicy Oats-Rava- Banana Pancakes/ Polo/ Dosa" is done and ready to be served. Serve this dosa hot with some homemade butter (loni), honey or dates syrup, tastes simply awesome with them. Remove the remaining dosa in similar pattern and serve them hot to your family, they will love it for sure, especially children, they will ask for more. 

** Note : Prepare the batter only that much how much is necessary and do not make it in large quantities and store in fridge. The batter is best consumed immediately as addition of bananas leads to fermentation of the same and may turn slightly blackish in color.
