As I was chopping magge for koddel, I did not have the heart to discard the seeds, nor did I want to prepare tambuli, so just gave a try preparing juice out of it and here is a delicious coolant, sort of best out of waste ... Magge on its whole has body cooling properties and balances acidic levels, so think before you throw it away the next time, give this a try, you will not regret it, tastes like a cross between peru and sugar cane juice ... Yummilicious ......
** Magge ie South Indian Cucumber/ Southeykayi is a veggie with lots of water content in it. The whole veggie is edible except for its outermost skin, though some eat that too when cooked along with flesh portion added on to curries. I have already added lots of dishes prepared with it as we Konkani Saraswats use this veggie very often koddel/garlic seasoned curry being the most sought after. As mentioned above, I did not want to through the innermost seeds to which some fleshy portion is attached which many throw off including me in initial days of my cooking. But after coming to know that the seeds are as good as other melon seeds I never chuck them out. I either wash and dry them and further roast them and eat or prepare tambuli (check it out via search option, it has already been blogged). Today thought why not prepare juice as this veggie is edible without cooking too. You can just grate it, add jaggery, mix well and eat it too, will post the same too. Cutting short explanations as it is not possible under present conditions, I will straight away post the recipe to this delicious and healthy drink. Those of you who suffer from acidity, can consume this vegetable freely as it has cooling properties. Also you can replace jaggery with sugar or even honey if desired.
** Here is my simple recipe for "Maggechi Bee ani Limbiyache Sherbat (South Indian Cucumber Seeds and Lemon Juice)" … My Style ..
** Cut the magge/ south Indian cucumber into half horizontally and then again into four pieces vertically. You will get the inner seeds to which some fleshy portion is attached. With the help of knife slice it the whole length and then just cut it into chunks. I have also included some of the good edible pieces by slicing off the outer skin too.
** Rinse and put the cut pieces into a mixer grinder along with water and grind to a paste. The amount of water depends upon how much pieces you have used. There is no need to grind too fine as it will not get done so. However, see to it that the seeds have got well crushed and be ground to grainy consistency.
** Remove and sieve it through a very fine stainless steel sieve. Add sugar to taste, a large pinch of kala namak, lemon juice again depending upon the quantity of juice and finally a generous dash of cardamom powder and mix well. You can either add some ice cubes or put it fridge for an hour to get chilled.
** "Maggechi Bee ani Limbiyache Sherbat (South Indian Cucumber Seeds and Lemon Juice)" is done and ready to be served. Serve it chilled or as it is in glasses at mid morning break and enjoy with your family. A great coolant for summertime when the heat is on and the body needs to be cooled off.
