Crisp Fried Bhendi (Okra)- Cabbage Raita (Salad)


"Crisp Fried Bhendi  (Okra)- Cabbage Raita (Salad)" ... A simple but delicious and healthy raita that can be served as side dish along with any spicy dish of your choice ... I have microwaved the bhendi (lady's finger/ okra) crisp with just about 1/4 tsp oil and the addition of cabbage along with homemade skimmed milk curds makes it that much more healthier ... a little bit of raita served during meals contributes to healthy lifestyle ... Yummilicious .... 

** Salads or Raita’s are a must in most of the homes while a salad is referred to a dry mix of assorted veggies, raita is the same to which a little bit of beaten curds are added. Seasoning to the same again is a matter of choice, but all said and done, a little bit of salad served as a side dish goes a long way in promoting good health. Salads are loaded with health benefits, less in calories, provided they are prepared in a befitting manner. There are various combinations of salads that can be prepared and I have already included many in the Blog to which I am sharing a common link at the bottom of this recipe. Here again, I have added on crisp fried bhendi ie okra/ lady’s finger which I microwaved to it as we love this in my home very much. I have prepared another version of this long back and posted the same, again I am sharing the link to it too. I often prepare salad both with or without the addition of curds as hubby and me both are crazy of salads. Sometimes I like to keep it simple and prepare it just this way, that’s it. It simply tastes delicious and is healthy and light on tummy too. 

** Here is my simple method of preparing "Crisp Fried Bhendi (Okra)- Cabbage Raita (Salad)" .... my style ….

** Wash and wipe dry about 200 gms of bhendi/ lady’s finger/ okra. Slice off both the side edges at tip and cut them into ¼ inch size rounds. Apply a pinch of salt and ¼ to ½ tsp of any edible oil and mix well. 

** Now there are two methods in which you can proceed to fry the Bhendi/ Okra. You can either microwave it until done by putting it in an microwave glassware dish or put it in an non stick tava and stir fry. In all the bhendi’s should be crisp fried. Remove and keep it aside ready.

** Cut into fine pieces about 2 cups of cabbage. Rinse it under water in a colander and allow the water to drain completely. You can put it in a clean white cloth and pat it dry too, this dries it faster if in hurry. Cut about 3-4 green chillies into small sized pieces giving them slightly slant cuts and keep it ready aside.

** Now in a wide stainless steel bowl add in about one cup of beaten curds. Add salt to taste, pinch of hing powder, chopped and kept green chillies and the cabbage and mix well. Add in a handful of finely chopped coriander leaves. Just before serving add in the crisp fried bhendi, a dash of chat masala (I used store bought), mix well and serve immediately. 

** "Crisp Fried Bhendi (Okra)- Cabbage Raita (Salad)" is done and ready to be served. Serve this as an accompaniment with any spicy curry and pulav, khichidi or any other dishes of your choice. It goes very well with any dish. Just keep it mind to add the crisp fried bhendi just before serving, as if you let it rest it turns soft/ limp and looses on taste. Children and elders both love the crunch of the bhendi in raita when served immediately.
