Butter Chakuli/ Murukku made with cooked rice and Urad Dal powder.


"Butter Chakuli/ Murukku made with cooked rice and Urad Dal powder along with spices" ... kur kuri/ nur nuri chakuli and pieces to munch when boredom strikes ... Yummilicious ... 

** Chakuli is a treat to munch on and you can simply munch on a few at any time of the day. There are many variations adding different ingredients and preparing of this crunchy savory. Today I tried out a recipe posted by my friend Suphala Shenoy in my food group Konkani Delicacies and the taste of these chakulies were too good. The chakuli too was crunchy and crisp, I tried a few into spirals and rest like pieces the way suphala herself had posted. Thanks Suphala we loved it, I have not made any changes in the recipe and stands the same 

** Here is the Recipe for "Butter Chakuli/ Murukku made with cooked rice and Urad Dal powder along with spices" ….. 
1 cup of cooked white rice (any white rice will do)
3/4 th cup urad dal (black gram dal)
1/2 cup rice flour (tanda pitti/ chawal ka atta)
1/4th cup besan (Bengal gram flour) 
2-3 tablespoons of butter (loni) at room temperature, it should be soft.
Salt to taste (namak swad anusar/ jai jallel title meetHa)
1/2 tsp chilli powder (laal mirchi pitti/ mirsange pitti)
1/4th tsp Haldi (turmeric) powder
pinch of hing (asafoetida) powder 
1/2 tsp whole jeera (cumin seeds)
Oil (Tel) for deep frying 

** Dry roast urad dal till light brown in color. Allow it to cool and then powder it in a mixer grinder finely. Sieve the powder. This is called urdina hurna which is added almost to all chakuli preparation. I am sharing a link at the bottom of this recipe, you can check out the preparation method of this hurna in detail there.  

To prepare the mixture for Chakuli/ Murukku : Grind cooked rice in a mixer grinder till smooth without adding any water. Remove it in a wide bowl. To this add in the urad dal powder (hurna), rice flour, besan, salt, chilli powder, turmeric powder, hing powder and jeera seeds along with the butter and bind to a stiff dough without adding water. 

** If you find it difficult to bind the above with the given measurement, add in a little bit of butter and do so, you can sprinkle just a teaspoon of water or milk if need be too. Apply a little bit of oil all round the dough and keep it covered ready aside after kneading it well. 

** Heat plenty of oil in a thick bottomed kadai for deep frying. Meanwhile, smear oil inside the chakuli press and place the star shaped acchu/ plate in place and then add in a large ball of the prepared dough by kneading and making it into oblong shape. 

** Press either into spiral chakuli shape or into pieces on a sheet of paper. Check the heat of the oil in kadai, when hot add in the pieces or chakuli into the oil and deep fry on constant medium heat till they turn golden brown in color and are evenly done.

** Strain through a ringed spatula and place it on an absorbent paper for the excess oil to get drained. Continue pressing the chakuli through mold til done and deep fry them in the same method as mentioned above it all the prepared mixture and done. 

** "Butter Chakuli/ Murukku made with cooked rice and Urad Dal powder along with spices"  is done and ready to be served anytime you desire. Store them in airtight container and serve and relish with your family and friends as desire. They remain good for around 2 weeks.
