Chilled Lychee/ Litchi Lemonade

“Chilled Lychee/ Litchi Lemonade” … the rains have disappeared and so with it have the cool weather, it’s hot in Mumbai and all you need is a coolant to sip on and relax … Lychee’s are still available and lemons are good source of Vitamin C, the need of the time … So enjoy this sweet delicious lychee lemonade along with some roasted chano/ black bengal gram to munch on, with family this weekend … Yummilicious ….

** Lychee/ Litchi a very tasty fruit that is available for limited days towards the end of summer and beginning of monsoon. The flesh within is white translucent with a unique aroma and taste while it has a very thin outer skin while the inner dark red seed is quite large in size compared to the size of the fruit. I have already posted simple juice prepared using these fruits a week or so before and this time I just about managed to get some so tried out lemonade. The lock down has made it very difficult to get anything otherwise I would have loved to try out different dishes using this delicious fruit, I guess it will have to wait for another year, till then if they are available to you, enjoy the benefit by preparing various dishes with it.

** Here is my simple recipe for "Chilled Lychee Lemonade" … My Style …
** There is nothing elaborate as such in preparation of this juice. I just peeled off the outer skin and removed the inner whitish opaque fleshy portion, discarded the innermost seed. Add the edible fleshy portion into juicer grinder along with a few ice cubes and sugar to taste and run it till well blended. Remove and sieve through a slightly larger holed sieve into a vessel. Add in 2 cups of water and mix well. Check the consistency, if you find it still too thick for lemonade you can add in another cup of water and mix well. Add in a pinch of Kala Namak (rock salt) or any other salt and juice of freshly squeezed lemons again depending upon the amount of Juice prepared, mix well.

** This how I prepared the Lychee/ Litchi Lemonade : I used about 1 full cup of lychee edible flesh pieces, to which I added around ½ cup of sugar, Juice of 2 lemons, pinch of kala namak and about 4 cups of water. Once sieved and while serving I added a few thinly sliced lemon pieces, a few crushed leaves of ajwain topped with ice cubes. Actually it is best to use pudina/ mint leaves but I could not get them, so if it is available to you please add them on crushed just while serving, it taste great.

** Note : Do not add water while blending as lychee flesh contains plenty of water within itself and may turn out thinner in texture. Best to grind it with sugar and a few ice cubes (optional) and then add then added on while observing the consistency.

** "Chilled Lychee Lemonade" a delicious healthy juice is done and ready to be served. Serve them in tall glasses immediately to maintain the health benefits within as on storing it somehow loses lots of nutrients. All fruit juices are always best served immediately on preparation to obtain maximum health benefits from them. Add on some crushed ajwain, mint or coriander leaves, I added ajwain as I have its plant at home. Also add on some ice cubes and a few thinly sliced lemon pieces and not only will it taste great but adds on taste too. Enjoy them served with some snacks to munch on and a great mid morning break healthy juice is ready to make all charged out for work all over once again.
