Drumstick Leaves (Mashinga Pallo/ Moringa)~ Vegetable Soup.


“Drumstick Leaves (Mashinga Pallo/ Moringa)~ Vegetable Soup” … Drumstick leaves have immense health benefits and are a little bit difficult to get as you need to go to the right places which is not possible now, but somehow had got these last week ... prepared two dishes, soup and biryani and finished it off .... It's Steaming Hot Soup topped with fresh homemade butter for dinner today as It’s raining and there is chill in the air, I guess the season of hot soups for dinner begins … go ahead and enjoy them hot and then stay warm under woolen blankets and have a good ZZZzzzz … Yummilicious ... 

** Winter season means searching out for more options in preparation of soups keeping in mind nutrition levels and availability. In my home we just have a large bowl full of steaming hot soup for dinner sometimes which I serve with toast, bread or any other snack but most of the time it’s just soup to be relished as we like to keep the dinner light. Steaming hot soups do cheer up the monsoon mood swings and keep the body feeling good and when we feel good and contended, we sleep well and rise up all shining and full of vigor. Though I prepare both veg and non-veg soups at present I guess it’s going to be veggies and pulses as that is what is only there in stock at home. I am happy I managed to buy some eggs, so I will be trying a few soups with addition of the same if possible too. This one is a simple soup I prepared with veggies along with drumstick leaves which again I wanted to finish off after adding some to egg biryani. 

** Drumstick Leaves ie mashing pallo in Konkani and Moringa leaves worldwide is loaded with health benefits and is also sold commercially in powder form for consumption. It is abundantly available in almost all places in our country, so do make the best use of it, there are plenty of recipes in my blog using these leaves which I am sure will be loved by your family. Do try out this delicious, healthy soup and see to it that your children to savor them for maximum health benefits, you can add in a egg and stir it up when its boiling if you like, tastes wonderful. ** Here is the simple method of preparing “Drumstick Leaves (Mashinga Pallo/ Moringa)~ Vegetable Soup” … My Style … 


** Wash and wipe 1 large sized Tomato, cut them into quarters and put them in a pressure cooker. 

** Peel of the skin of one small sized Beetroot, cut them into small pieces, wash and add it into the pressure cooker. 

** Peel of the skin of one large sized Potato (Aloo/ Batato), cut them into small pieces, wash and add it into the pressure cooker. 

** Peel of the outer skin of one large sized Onion (Piyavu/ Kanda), slice them into small pieces and add it into the pressure cooker. 

** Wash well and add in ¼ cup of Moong Dal (Split Green Gram) also into the pressure cooker. 

** Also add into the pressure cooker, one inch piece of Ginger (Alle'/ Adrak), 5-6 Garlic (Losun) (skin peeled), 1 tsp of Black Pepper (Mire/ Kali Miri). 

** Wash and add in 1 cup of Drumstick leaves (Moringa/ Mashinga Pallo) into the pressure cooker. (Use fresh tender leaves only, do not add stems). 

** Add water say ¼ level of the veggies in the pressure cooker and pressure cook on medium to low heat to 2 or 3 whistles or more taking into consideration that the all the ingredients in the pressure cooker should be cooked mushy/ very soft. Remove and keep the pressure cooker aside and allow the pressure to drop on its own. 

** Once cool enough open the lid gently and allow the steam to pass away. Allow the pressure cooked ingredients to cool to room temperature. Once it’s cooled completely remove and blend it in a mixer grinder or hand blender to a very smooth paste and then sieve through the medium holed sieve into a thick bottomed vessel, adding more water if necessary. 

** Add in Kala Namak (Rock Salt) or any salt, and Red Chilly Powder (Mirchi/ Mirsange Pitti) according to your taste and mix well. Bring to a boil on medium heat stirring often. Simmer for 5 minutes, add in a tablespoon of Butter/ Loni (Optional) and mix well. Remove from fire and keep aside covered for 5-10 minutes for the soup to get well settled and the butter flavor to get infused into the same well and it is done. 

** “Drumstick Leaves (Mashinga Pallo/ Moringa)~ Vegetable Soup” is done and to be served. Soups should always be served steaming hot in bowls for best taste to sip on with some snacks or starters as accompaniments. You can sprinkle some fresh coarsely ground pepper powder or even some grated cheese or butter before serving for enhancing the taste and flavor, it does taste delicious. 

** The choice of serving soup with some accompaniment of your choice depends on individual preferences. You may tava fry some bread with butter and serve along with the soup or serve them with some tortilla chips or any other wafers/ bread sticks or toast, fryums or any other fried vadas, vodies, ambados etc, they taste great.
