“Simple Tomato Saar / Saaru” … This is a no fuss tomato saar prepared by just cooking and crushing the tomtoes slightly and then seasoning them … A lovely saar that goes very well with rice along with other dishes … Yummilicious …
** Tomato saar is a dish / saar that is served with rice in most South Indian homes and for us Konkani Saraswat’s its second on list of dishes served with rice. The first one is always Dalitoy (Spiced Tuvar Dal) which is something every Amchi relishes from chilhood to old age. Saar too is another dish served by and large be it at functions or on holy days and is a topmost on list item during temple functions. Saar is prepared mostly with the addition of masala powders or ground masala and it tastes simply awesome and even better the next day. I have posted it already before and you will get the same if you use the search option. Will share a common link at the bottom of the recipe too, you can check on the same.
** This particular tomato saar is however prepared without the addition of any masala to it and is a very simpler version of tomato saar. Here only tomatoes are cooked, crushed slightly and seasoned, that’s it. This saar is my hubby’s favorite, and was the one MIL used to prepare which he loves to date. Though he loves the one with masala addition, he often demands that this simple saar with the awesome aroma of only tomatoes is prepared too. So today on his demand after a long time prepared this saar keeping it simple the way he wanted and yes as the name goes it really is simple to make. The saar is indeed yummy with the aroma of tomato and is specially for those who love tomatoes. Also remember to season the saar with ghee or else the taste is lost.
** Here is the Recipe to Simple Tomato Saar / Saaru ….
* Just wash, wipe and chop 3-4 large tomatoes into small pieces. Put them in a thick bottomed stainless steel vessel along with 4 cups of water and bring to a boil. Now lower the heat and simmer till the tomatoes are cooked soft.
** Now remove from fire and with hand blender slightly crush the tomatoes for a second. You can also use a potato masher and slightly mash the cooked tomatoes. Do not blend it well, just a slight crush to allow the tomato saar to get slightly thicker in texture.
** Now put back the vessel on heat and add 5-6 green chillies slit lengthwise and then cut into medium sized pieces, salt to taste and boil well. Lower the heat add in a handful of finely chopped coriander leaves and 2-3 tblsp of freshly grated coconut and mix well. Keep simmering for a good 10-15 minutes.
** Heat 2 tblsp of ghee in a small pan, when hot add in ½ tsp of mustard seeds, when they begin to splutter add in 1 tsp of cumin seeds followed by 1 tsp of hing / asafoetida powder and 10-12 fresh curry leaves. Fry for a second and pour this over the simmering saar.
** Check the consistency of the saar, if you find it too thick add in a glass of water now and then bring it to a boil again, remove from fire and keep it aside covered for a good 30 minutes for all the flavours to seep in properly.
** “Simple Tomato Saar / Saaru” is done and ready to be served. Serve it piping hot with rice along with some dishes and enjoy your meal. This is a simpler version of the saar that gives you more of the tomato aroma and the spice level is milder, so it goes better when served along with spicier side dishes if you are a person who loves spicy food.
