"Urad Dal~Sprouted Green Moong Dahi Vadas" ... It is not fair if vadas are prepared and not relished dunking them in curds ... Heyna ???? Dahi ko bura lagega ... here are some of the vadas that I separately added in spiced dahi ... Please go ahead and Enjoy them chilled ... Yummy Yumz .......
** Dahi Vada is a delicious chilled snack relished specially during summer season, but can be done so during any time of the year too. Mumbai heat has started soaring higher slowly and it is no more as cold as it used to be, though it is much cooler in the evenings and nights. Oh, yes, we do need the blankets to cuddle up for a warm night and tight sleep. But in the noon it is a pleasure to eat these cold dahi vadas when coming home after a few hours out in the hot sun. I always divide the Vadas when I prepare them in small sizes and go about making sort of 2 in 1 dishes by dunking some in hot rasam and the others in dahi. That way the first day I relish the ones in rasam and next day I get to eat the chilled dahi vadas as I keep them in the fridge for a minimum 12 hours to get completely cooled. I have already posted bot rasam vada and dahi vada before too in the Blog, but this time I have prepared them using sprouted whole green moong both while grinding and into the curds too and it tastes simply awesome. I will be sharing the link to the previous dahi vada too at the bottom of this recipe, for reference. Do go through the same.
** Here is my method of preparing "Urad Dal~Sprouted Green Moong Dahi Vadas" … My Style ….
** The Vadas are the same that which are used dunked in Rasam for Rasam Vada, So I am not repeating the procedure of preparation of Vadas again as there is absolutely no point in doing the same again. I am sharing the link here for the same, so please do go through the link for the recipe of the Vadas while the method of preparing dahi Vada is given below ..
** You will need about 12-15 small "Urad Dal~Sprouted Green Moong Vadas" for adding into the Curds. The curds need to be fresh and thick.
** For preparing curds for Dahi Vada : Beat 2 cups of curds with 1 cup of water well to a smooth texture. Add 1 tsp sugar, 5-8 chopped green chillies (depending upon how spicy you want it to be), few coriander leaves finely chopped, 1 tsp of hing powder, 1 tsp of grated ginger, ½ cup of sprouted whole green moong, salt to taste and mix well till the sugar has melted.
** For soaking Method : Just put the vadas in warm water for 10 minutes, it absorbs the water. Remove and press them between the palms gently to squeeze out the water. This should be done gently so as to not break the vadas. Then add them into the flat tin and pour all over it the prepared curds.
** Cover and keep it in the fridge for a good 12 hours or so that the vada’s get soaked properly in the curds and turn soft. You can season this with rai and curry leaves, sprinkle some chilly powder and khatta meeta chutney just before serving. They taste best when they are eating very cold.
** Note : While serving Dahi Vadas, check if the vadas have soaked in all the curds, if so, you can beat some more curds in similar method and add in to the vadas and mix before serving, so keep some fresh curds ready in the fridge if need be for the sake of serving too.
** "Urad Dal~Sprouted Green Moong Dahi Vadas” are done and ready to be served. You should always serve this cold for maximum taste of the same. They taste great when served cold topped with a spoon full of tangy tamarind and spicy coriander chutney. I have not added on the chutney as in my home we sometimes relish this simple as it is.
