"Nachani (Ragi) Kanji/ Finger Millet Porridge" ... my simple but nutritious- healthy dinner ... nachani as you all know is the best God given millet to mankind ... So add it on to your dishes in different ways and reap in the benefits ... a little bit added, does a lot of good ... I have prepared this with addition of curds and tempered with onion- garlic and green chillies, sort of a soup and it's very tasty ... Yummilicious .....
** As it is aware all over the world now that millets are very good for health and Nachani/Ragi/ Finger millets top the list as it is ranked the highest in calcium content and you all know that plenty of calcium is needed throughout our life for good and healthy bones. I will not run into the nutritional benefits of nachani as not only all are aware of it by now, but also you can check it out on google as there is plenty of information available there. I have always loved relishing nachani in any form from childhood and Mom made nachani uddaka/ drink and polo/dosa often which we all loved so much. I have already posted many dishes experimented and prepared on my own using this flour which you can use the search option for.
** I have included this flour which is freely available into my diet about 15 yrs back as I was asked to have in plenty of calcium and I believed in relying on food compared to medicines. Of course medicines are a must if you have been prescribed but you can increase food rich in calcium and then decrease the dosage as and when found necessary. I have done that, and now enjoy many of my own recipes tried out in various variations for the same. This Kanji is a thick soup sort of a dish that can be prepared either sweet or spicy and is great to be relished during Dinner as it is quite tummy filling dish. Simple to prepare, loaded with health benefits and great on taste too, So do try it out and enjoy with family and friends and stay healthy.
** Here is my simple recipe for "Nachani (Ragi) Kanji/ Finger Millet Porridge" … my style …
** Mix 4 tablespoons of “Nachani (Ragi/Finger Millet) Four” with one cup of water to a smooth lump less paste in a thick bottomed stainless steel vessel. Now add in 2-3 cups of water to it and further mix well till the paste is thinner in texture without any lumps.
** Now cook this on medium to low heat level stirring continuously till you see bubbles appearing on surface. The mixture will thicken out a lot and if not kept stirring will form into lumps and stick to bottom too, in which case lower the heat and keep stirring.
** If you find the paste too thick you can add in another cup of water, but it is better to avoid the same, as we will be adding in curds so it will thin out later too, so do not add too much water initially, you can always add it on later as and how much is necessary.
** Remove and keep it covered aside. Now add 1 tblsp of fresh "Homemade Cow’s Ghee" in a small pan and when hot lower the heat and add in 6-8 peeled and chopped "Garlic/Losun". Fry the garlic for a minute or two and then add in 3-4 "Green Chillies/Hirvi Mirchi" cut into pieces.
** Fry the chillies for a minute and then add a small "Onion/Kanda" finely chopped and continue frying till it is even fried to a light brown color. Pour this over the cooked nachani kanji and mix well adding salt to taste. Keep it covered aside till it cools down to room temperature.
** Beat one cup of "Fresh Skimmed Milk Curds/Dahi" to a smooth consistency and add to above nachani mixture. You can add it when slightly warm, but not if it is hot or else the chances of the kanji being curdled are high. Mix well, check seasoning, add if necessary.
** "Nachani (Ragi) Kanji/ Finger Millet Porridge" is done and ready to be served. Serve it immediately before it runs too cold. You can prepare this into thinner texture too and have it as a drink at mid morning. Nachani is very good for health, I have benefited, so will you, so do include it into your daily diet in any form you love to have it.

** Note : Some do not add tempering to the kanji, but just add on some finely chopped or crushed green chillies or black pepper powder, mix and have it as a drink too. If you want to avoid tempering/seasoning you can do so, but I have learnt decades back that ghee is actually good for health in limited quantities, so do add it if possible, off course the choice is yours.
