Cabbage-Coconut Koshimbir/Salad.

“Cabbage-Coconut Koshimbir/Salad” … Crunchy salads are a delight to munch on … prepared some with fresh crisp cabbage with addition of freshly grated coconut along with spices as side dish to be served with simple meal … Yummilicious ….

** Koshimbirs/Salads as you all know are very healthy and should be included into our daily pattern of food. There are plenty of choices in which these are can be prepared both with pulses or with veggies. The most sought after ones are with the inclusion of curds called raita, but then even raw veggies salads are now becoming a sought after salad by the health conscious as they are almost fat free. This one is a easy one though I will not say it is fat free as I have added freshly grated coconut. The same can be prepared without the inclusion of coconut too. We south Indians really are found of coconut and add them on almost in all dishes and this one is loved by my family, again onions also can be finely chopped and added on which I have done so this time as it was a no onion-garlic day for me. I have included plenty of salads in many variations in my Blog and you can find them by using the label section on the left side of the blog or use the search option too. Do try them out and enjoy a healthy lifestyle for you and your family.

** Here is my simple method of preparing “Cabbage-Coconut Koshimbir/Salad” … My Style …

** Finely chop cabbage, say about 4-5 cups and put them in a wide bowl. Add in one cup of finely grated fresh coconut/soyi along with 3-4 green chillies (hirvi mirchi/tarni mirsanga) cut into small pieces. Add salt to taste and the juice of ½ freshly squeezed lime. Toss all well together with the help of a fork to mix well. Keep this ready aside.

** Heat 1 tsp of Coconut Oil (or any other oil) in a small pan, when hot add in ½ tsp of Hing/ Asafoetida powder and then pour it over the salad and once again mix well. You can add in a few curry leaves if desired, I have not added them, but do so sometimes. Again you can add in a handful of finely chopped fresh coriander leaves too.

** “Cabbage-Coconut Koshimbir/Salad” is done and ready to be served. A simple delicious and healthy koshimbir/salad that can be served as side dish along with other dishes. It was a no onion-garlic day for us, so I prepared this salad along with chana kismuri and chapati for lunch and it was indeed a healthy, tasty and tummy satisfying meal.

** Do try this simple koshimbir/salad and enjoy a healthy meal with your family. Always make it a habit with children to have salad as side dishes, you and your children will be thankful for the same in the long run. Remember it is very difficult to curtail long standing habits and good formed habits will always give you results you will be happy for.
