Onion-Tomato- Green Moong Sprouts Raita.


“Onion-Tomato-Green Moong Sprouts Raita” … Raita is a simple, healthy, delicious salad with addition of curds served as a side dish along with other dishes … tastes great when served as an accompaniment to spiced rice dishes … include them into your daily diet now .... Yummilicious … 

** Raita is a salad served as side dish, which is prepared with addition of raw veggies like cucumber, tomatoes, onion, carrots etc. along with spices to "Curds” which are rich in protein, calcium, Vit.D and is good for digestion having healthy gut bacteria. One should include different mix and match of Raita’s into their daily diet for maximum health benefit and thereby forming by a good lifestyle. Salads should always play a prominent role in our daily diet, if not for afternoon meal, then at least one should have it any other time of the day like dinner, mid morning etc. If you have not included salad as a part of your meal, then you are missing healthy nutrients, so do so starting from today. All nutritionist advice on raitas or salads to be made a must along with meal now, but our ancestors were wise enough to include them ages back. If you cannot prepare a proper combined one’s then at least munch on a carrot or cucumber slices or a handful of sprouts on daily basis they are much better than having fried snacks like chakuli or biscuits etc. Curds as I have already mentioned are very good for digestion and other stomach problems. You should have at least half a cup daily or have some buttermilk after meals which is definitely going to be very helpful to you in the long run. 

** Always prepare fresh homemade curds with skimmed milk for reaping in more health benefits as they are almost fat less. We Indians have always had them included in our daily meals and we should thank our ancestors for this introduction pattern of meals, as our meals were always followed by buttermilk that really helped in digestion of food. To date restaurants that serve thali or full meal plate always include a cup of curds or follow the meal by serving a glass of buttermilk through out the country. Coming to sprouts, as you all know they are filled with proteins which makes it that much more necessary to consume specially so if you are a vegetarian. A handful of sprouts a day is all that is needed to build in good protein content in our body. So, in all, I must say here that this is a very healthy and delicious raita having all the right ingredients that goes very well as an accompaniment or side dish along with all types of food specially so with spiced rice dishes. I have already included many types of salads in various combinations in the Blog and will be doing so in future too. So choose out one that is suitable for you and go for it. Remember habit are easily formed and it is our duty to make the same for our future generations so that they lead a healthy lifestyle. 


** Here is the simple method of preparing “Onion-Tomato- Green Moong Sprouts Raita” … My Style … 

** Peel off the skin and finely chop one large sized "Onion" and put it in a bowl. Wash and wipe 2 medium sized "Tomatoes" clean and then cut them into small pieces, discarding the inner seeds and add to the above mixture in the bowl. 

** Add in half cup of "Sprouted Green Moong" (* method given at the bottom of this recipe) to the above ingredients in the bowl. Add in 3-4 finely chopped green chillies, handful of finely chopped coriander leaves, pinch of hing/asafoetida, salt to taste, and mix well. 

** Beat 1 cup of thick "Skimmed Milk Curds" with 2 tblsp of water to a smooth consistency and add this to the ingredients in the bowl and mix well. If too thick you can add in a little bit of water and mix well. Check salt and add if necessary only. 

** Seasoning/Tempering : Seasoning is Optional and I have not added on the same here. But it does taste great and you may do so if desired. Just heat ½ tsp of coconut oil (you can use any other oil), when hot add in ¼ tsp of urad dal/ black gram and when the color changes slightly add in ½ tsp of mustard seeds, when they begin to splutter add a few curry leaves fry for a second and then pour it over the salad. Now mix all the ingredients well. Keep it covered aside for 5 minutes and serve.


** “Onion-Tomato- Green Moong Sprouts Raita” is done and ready to be served along with other dishes. You can serve it as a side dish for any thali or combo meal. You can also relish this as it is for lunch/ dinner as it is, if at all you want to go light and avoid having a meal. This raita tastes awesome when served with spiced rice dishes like, pulav, biryani, khichidi etc. Do include this delicious raita into your diet and relish them with your family and friends. 

** We must include both curds and salads into our daily diet, so it is that much easier if you include raita in its place, this way you assure you consume both of them and so does your family. Many a times due to back to back functions or festivals, we tend to over eat a lot which leads not only to weight gain but sometimes even stomach indigestion. You can always make a huge bowl of this raita and put it in fridge and relish the same in place of lunch/dinner and trust me it really sets your body right in a day or two.
