Kanda Poha/ Beaten Rice with Onions.

“Kanda Poha/ Beaten Rice with Onions and Adraki Ellaichi Chai/ Ginger Cardamom Tea (Masala Tea/Chai)” … This is one of the most famous Maharashtrian breakfast dish served in almost all homes and loved by all those who come across it anytime in their lifetime … a delicious~ healthy breakfast option with added goodness of Groundnuts/ Peanuts … Yummilicious ……

** I have posted so many varieties of Poha/ Beaten Rice dishes that it came as a surprise to me that I had not included the simple traditional method in which it is prepared. Well, many a times I do come across such situations where in thinking that the common dish must have been posted you never bother to cross check. For some reason when going through the poha posts I came across the same prepared and posted with red poha but not with the normal easily available white ones. This is a very common and easily prepared dish all round the country more so in the state of Maharashtra. I have written a lot about poha/ beaten rice and the various preparations I prepare many a times before, so I am just posting a common link to all the poha recipes in my Blog. Do check out the same if you need more details and new varieties of preparations.

** Here is the simple and healthy method of preparation of “Kanda Poha/ Beaten Rice with Onions”.... My Style ….

** Put about 250 gms of thick poha / jada poha in a colander and rinse under running tap water. Allow the water to be drained and keep this aside for about 20 minutes. There is absolutely no need of soaking the poha. The little bit of water that is stuck to the poha while rinsing is enough for the poha to get soft and of the correct texture in 15-20 minutes. Just separate it with the help of fork gently before adding it on while preparing, that’s all.

** Peel off the skin of 1 large sized or 2 medium sized onions and chop finely. Keep this also ready aside.

** In a thick bottomed kadai, add in 2 tblsp of ghee and 2 tblsp of oil together and bring to heat. When hot lower the heat and add in 1 tblsp of jeera (cumin seeds), 1 tsp of mustard seeds (sasam/rai), 5-6 green chilly cut to pieces, ½ to 1 tsp of hing powder (depending on its aroma), ½ tsp of haldi (turmeric) powder and about 15-18 fresh curry leaves (kadipatta/ karbevu) and fry for a minute.

** Now add in a handful of roasted groundnuts/ peanuts and fry for a minute or two then add in finely chopped onions and fry till the colour changes slightly ie it turns translucent. Add in the poha kept prepared and kept ready, salt to taste and mix well, taking care to see that the salt gets mixed in well with the poha. Do this lightly and do not add more pressure when stirring or else the poha may crumble. Sprinkle some water only if necessary. Cover with a tight lid and let cook on slow fire in its own steam.

** After few minutes remove the lid and mix all the ingredients together again. Sprinkle some water again if you find the mixture of poha too dry. Cover with lid and let cook for some time or till done. All it takes is about 8-10 minutes for the poha/pova/beaten rice to get soft and cooked well. Remove from fire add in the juice of one freshly squeezed lemon and handful of finely chopped fresh coriander leaves, mix well, cover and keep aside for 5 minutes for the flavours to seep in properly and it is done.

** “Kanda Poha/ Beaten Rice with Onions” is done and ready to be served. Tastes best when served hot and freshly prepared as somehow it loses its taste when cold. There is absolutely no need of any accompaniment for this one but if you prefer you can relish it with some raita, pickle, chutney etc. We Konkani Saraswats have a habit of serving upma, usli, poha etc. with steamed Nendrabale Kele/ South Indian Bananas which tastes awesome. However, I served it as it is with hot Adraki Ellaichi Chai/ Ginger Cardamom Tea (Masala Chai/Tea) for breakfast and it really was really tummy full and relished well by all.
