** As I mentioned many times before too any festival related to Shri Ganesha is mostly observed by preparing Appo/ Sweet Paniyarams for Naivedyam/ Prasadam in my home as it is believed to be one of his favorite sweet dish the other being modak. Preparing these spongy sweet appos are a delight as almost everybody loves munching on them. There was a time when I had to prepare them in bulk as many of my friends would demand the same. With changing of times and moving out of places all such events have come to a complete stop but nevertheless the tradition continues and I always prepare them.
** This is my second version of preparing appo with addition of dates syrup along with rava and other ingredients. I am sharing a link at the bottom of this recipe, so that you can browse through that version too though they are almost same, this one is easier and spongier. Dates syrup is store bought which is always in stock as I love adding it to various dishes though if not available you can just soak some in hot water and grind it smooth. Today being Sankashti Chaturthi a day that is observed by fasting and offering prayers along with Naivedaym at the lotus feet of shri Ganesh, I prepared these and sharing the same with all ...
** Here is my very own recipe for " Khajoor Rulav Kele Godu Appo/ Dates Rava Banana Sweet Paniyarams” .... My Style ....
** Ingredients :
Dates/ Khajoor Syrup : ¼ cup.
Chiroti Rulav/ Fine Rava : 2.5 cups (Approximately) or as required
Gonva peeta/ Wheat Flour/ Atta : ¼ cup
Ripe Bananas : 2 large sized. (Cavendish Banana)
Jaggery Powder/ Godda pitti : 1 cup approximately
Coconut/Soyi/Nariyal : ¼ cup freshly grated (White part only)
Salt/ Kala Namak : Just a pinch
Cardamom/Ellaichi/Yellu Powder : ½ tsp.
Cooking Soda : a large pinch.
Ghee (Toop) or Oil for deep frying.
** Peel the bananas and cut into pieces. Put them in mixer grinder along with grated coconut, jaggery powder and grind to a fine paste adding little bit of water. Add in the dates syrup and further grind till all are mixed evenly. Remove into a wide stainless steel bowl.
** Note : I have used Cavendish Bananas available plenty in Mumbai, you can use any ripe bananas. If using smaller variety of bananas add in more. I have used jaggery powder you can use jaggery blocks cut into small pieces too. I have used dates syrup, which is store bought, if not available, you can use about 20 dates soaked in hot water for 30 minutes.
** To the ground paste in bowl add in salt, cardamom powder, half cup of water, mix well. Now add wheat flour and mix well taking care to see that there are no lumps. You can use a whisk or ring beater to mix them all well so that the flour/ atta gets evenly mixed.
** Lastly add in the fine rava and mix well, if you find the batter is too thick then add in a few tablespoons of water little by little and keep mixing till you get a thick dropping consistency batter. Now, keep this covered aside for about 30 minutes for resting.
** Note : The step of allowing the batter to rest is important. This is done to ensure that the rava absorbs the moisture and is dunked in it resulting in swelling a little bit. If not allowed to settle the rava will absorb water while cooking resulting in brittle or hard appos.
** After the batter has settled well remove and once again mix well till evenly mixed, if you find the batter too thick, you can once again add in a little bit of water. Now add the cooking soda and mix well and the batter is ready to be prepared into appos.
** Heat the appo/ paniyaram pan and add in some melted ghee or oil in each of the dents, I have used oil and ghee together in 1:1 proportion. When hot, lower the heat and pour a large tablespoon of the batter into each mold/ dent of the pan.
** Note : Do not add excess batter into molds, It should remain within the inner level of the molds or else the appos will not hold shape and will leak out and create a mess.
** When batter is added into all the molds, cover with a dome shaped lid and cook on medium heat for about 2-3 minutes and then on slow till crispy on the bottom side. Gently loosen it with a blunt knife and flip it over and cook uncovered for another few minutes till done.
** Khajoor Rulav Kele Godu Appo/ Dates Rava Banana Sweet Paniyarams” are done and ready to be offered to Shri Ganesha as Naivedyam/ Prasadam after which you can distribute the same with your family and friends.
** Here is a very easy and delicious recipe of sweet appos with the added goodness of dates/ khajoor that can be prepared fast and is a breeze work as there is no heavy grinding involved. Children are sure to love these spongy sweet appos and so will older ones.
