Taikilo-Ambuli (Tora Leaves- Raw Mango) Chutney.

“Taikilo-Ambuli (Tora Leaves- Raw Mango) Chutney” … Taikilo/ Takla/ Tora leaves do not have any taste as such on their own, however, it's very healthy having medicinal properties, a gift from Mother Nature to all of us as they grow on their own during monsoon ... it is believed that consumption of these leaves keeps us healthy through the monsoon and year ... while taikile dangar/ ambado/ fritters is the most famous from GSB Konkani Saraswat Cuisine, there are many more dishes that can be tried using these leaves for healthy lifestyle … prepared chutney using fresh tender leaves with raw mango which is still available … Yummilicious …

** As I already mentioned in the title above taikilo leaves are available only during monsoon in plenty and have lot of medicinal properties so it is best to consume them as much as possible by preparing different dishes out of the same. Till 2 years back it was difficult for me to get it as it is not available in my vicinity. But having to go out often now on my job outside city gives me access to plenty of veggies and taikilo is one of them.

** As I now get them in plenty now, I am trying out different dishes using them. Change is always welcome to all and rightly so when it comes to food. Everybody loves to have a taste of different types of dishes at least sometimes, so try out different varieties of dishes and enjoy them with your family and friends. There are many monsoon delicacies in included in the blog which you can browse through label or search option, do try them.

** Here is my simple recipe for “Taikilo-Ambuli (Tora Leaves- Raw Mango) Chutney” … My very own recipe wherein I have added raw mangoes for tartness … tastes awesome …

** Pick, wash and chop roughly about 2 cups of fresh taikilo/ tora leaves and keep it aside ready. These leaves are available in bunches in plenty during monsoon season, if available in your vicinity, do try to include them into your food as they are supposed to be very healthy.

** Wash, wipe dry one small ambuli/ raw mango or you can use only one side slice of a larger raw mango. In all you need about one cup of chopped pieces. I have retained the skin of the ambuli, you may slice off the same if desired, however I suggest that you use it.

** In a mixer grinder add 2 cups freshly grated coconut (soyi/ nariyal) along with mango pieces, one inch piece of ginger (alle’/ adrak), 8-10 green chillies (tarni mirsanga/ hari mirchi) and grind to a paste with little bit of water, mixing well in between.

** Lastly add in the taikilo/ tora leaves and further grind to a very fine paste. Add more water as and when necessary while grinding to get a good smooth textured chutney mixture. Remove into a stainless steel bowl and add in salt (namak/ meeta) and mix well.

** “Taikilo-Ambuli (Tora Leaves- Raw Mango) Chutney” is done and ready to be served. This is a very nutritious and healthy chutney suggested in Ayurveda to be consumed during monsoon season to reap in medicinal benefit needed for the season.

** You can serve this chutney for roti/ chapatti, dosa, idly, mudo, appo etc. You can also serve it along with meals which is what many people do who include both rice and roti in their thali. You can also use it as a sandwich spread chutney and it tastes awesome.

** I guess nature has it’s way of providing those veggies, leaves, fruits etc. during that particular season to be consumed for a healthy lifestyle. We just ignore them or are reluctant to use the same, do not do so, include them and do enjoy a good immunity level.
