"Sankashti Chaturthi Naivedyam: Bajra~ Rava~ Khajur Sweet Appo/ Paniyarams" ... due to some personnel issue I could not share my prasadam ... but I believe it is never too late to do so with friends, do excuse ... this time for change I prepared appos using bajra for Bappa and trust me they were soft and spongy like cake from within ... Jai Guru Ganesh ...
** I have often mentioned that festivals of Shri Ganesha is observed by preparing Naivedyam/ Prasadam offering of Appo/Sweet Paniyarams in GSB community as we considered it to be one of Vignaharatas favorite sweet dish. This sweet Appo is also a must to be prepared during Ganesh Chaturthi time and I always make it a point to do so during the 10 days long festival usually on Ananta Chaturdashi day as on the first main day we go to visit our community gathering were they install Ganesha Idol and where we can offer sevas like Ganahoma, Mooda Ganapati Pooja, Flower pooja, Ranga Pooja, just to name a few.
** Due to pandemic last year the Pooja festival was not held as per Govt. regulations, this year no one knows for sure, but even if they do I am sure there will lots of restrictions and personally not sure if it is safe too. Well, last year was the first day after my marriage (30 yrs) when I prepared naivedyam of full meal to Shri Ganesha on Ganesh Chaturthi day in my own home. I have always believed that God stays in our own home and in our heart and when you pray with good intentions; he listens from wherever you perform it. If he desires that I follow the same this year, I pray to him to give me blessings to do so without any hitches.
** Two days back it was Angarika Sankashti Chaturthi and I had prepared these appos as Naivedyam but somehow due to personnel issues could not blog it, so do excuse. About this auspicious day that falls on Tuesday/ magalvara I have written about in an article which you may go through using search option. It is always a pleasure for me to prepare different combos of appos and my pleasure multiplies when they turn out perfect, which is when I feel blessed by dear Gampapa. Today, I have included pear millet flour while preparing the appos and the appos turns out soft and fluffy within just like the texture of a spongy cake.
** Here is my recipe for "Bajra~ Rava~ Khajur Sweet Appo/ Paniyarams” .... My Style, Do try out this variation of preparing Sweet Appo, they are lip smacking in taste and I am sure Shri Ganesha will be pleased with some variations from the routine ones … Jai Guru Ganesh ….
** Ingredients :
Chiroti Rava/ Fine Rava : 1 cup (Approximately) or as required
Bombay Rava/ Plain Rava : 1 cup (Approximately) or as required
Bajra/ Pear Millet Flour : 1 cup
Dates/ Khajur Syrup – 2-3 tblsp
OR
Dates/Khajoor : 15-20 seedless or seeds removed.
Ripe Banana : 1 large sized. (Cavendish Banana)
Jaggery/ Goda : About 50 gms cut into small pieces/ grated/ powdered.
Coconut/Soyi/Nariyal : ½ cup freshly grated (White part only)
Salt/Namak : Just a pinch
Cardamom/Ellaichi/Yellu Powder : ½ tsp.
Cooking Soda/ Sode pitti : ½ tsp
Ghee (Toop) or Oil for deep frying.
** Add the grated coconut, jaggery, khajur, banana cut into pieces in a mixer grinder and grind to a smooth paste with just the required amount of water.
** Note : You can use khajur/ dates syrup available in stores too, in which case you need not grind it but add directly while mixing the batter, which is what I do sometimes.
** Note : I have used the Cavendish Bananas which available plenty in Mumbai, you can use any ripe bananas. But if using smaller varieties of bananas to add in more.
** Remove and add this into a large bowl. Now add in both Bombay rava and chiroti rava, salt, cardamom powder, about 1 cup of water and mix well till properly mixed.
** Now add in the bajra flour and keep mixing adding little by little water to get an evenly pouring consistency thick batter, cover and keep this aside for 20 minutes.
** After the resting period check out the batter if it is too thick add a few tablespoon of water and keep mixing to get a lump free thick flowing batter.
** Now add in the cooking soda on top of batter and sprinkle some water on it, it will melt, immediately in a clockwise direction mix it in wall with the batter and it is ready.
** Heat the appo/ paniyaram pan and add in some melted ghee or oil in each of the dents, I have used oil and ghee together in 1:1 proportion which is my normal practice.
** When hot, lower the heat and pour a large tablespoon of the batter into each mold/ dent of the pan. Do not add more, it should remain within the inner level of the molds.
** Cover with a dome shaped lid and cook on slow till crispy on the bottom side. This will take a few minutes say about 5-8 mins, the top of appos when touched should not be sticky.
** Gently run a blunt knife through edging of each appo, loosen and with the help of a spoon flip over each appo and cook uncovered for a few minutes till done.
** Remove with the help of a spoon when done and repeat the process with the remaining batter till all the batter has been used up, remember to add oil+ ghee each time.
** "Bajra~Rava~Khajur Sweet Appo/ Paniyarams” are ready to be offered to Shri Ganesha as Naivedyam after which you can distribute with your family and friends.
** On the festive occasion of Angarika Sankashti Chaturthi, I offer these to Shri. Vignaharatha with prayers to remove all obstacles from our life ... Jai Guru Ganesh.
** This is a very easy and delicious recipe of sweet appos with the added goodness of dates/ khajoor and millets that can be prepared fast as there is no heavy grinding involved.
** Do prepare these delicious sweet Apposs on any festive occasion and remember to share them with family and friends to get maximum Blessings from Bappa.
** You can prepare them on normal days too when you have young children at home as they love munching on sweet appos, so do their friends. Stay Blessed- Spread Happiness.
** Note : The step of allowing the batter to rest is important. This is done to ensure that the rava and the flour absorbs the moisture and gets dunked in it resulting in swelling a little bit. The batter consistency should be thick dropping one. If you find the batter a little bit thinner do not be disheartened. Add in a few teaspoons of rava and gently mix the batter. If you have added in more and the batter has turned out dry on resting add in a little bit of water and mix well. To avoid such mishaps I advise you to add in the slowly little by little so that it does not dry out. Add in only that much rava that gives you right consistency.
** Note : You can increase the number of dates/khajoor if you find that the batter is not sweet enough. You can also substitute dates with dates syrup easily available in stores which can just be added after the grinding is done and mix well. Many a times I use dates syrup instead of dates/ khajoor as it is easier to do so.
