Multigrain Godu Appo / Sweet Paniyaram.

“Naivedyam : 21 ~ Multigrain Godu Appo's / Sweet Paniyarams” ... A little bit of twist in traditional recipe to please Lord Ganesha from routine appos (paniyaram) on the auspicious day of Margarshiramasa Mangalavar (Tuesday) … Sharing with all my friends here … Stay Blessed and have a lovely Day ….....

** Godu Appo / Sweet Paniyaram is a dish that is mostly prepared as Naivedyam / Prasadam to Lord Ganesha. It is said that Lord Ganesha loved Appos and Modaks very much and always demanded with his mother Goddess Gowri for the same. Hence, the tradition of preparing appo as Naivedyam has been followed to date by Konkani Saraswats. This sweet Appo / Paniyaram is a must to be prepared during Ganesh Chaturthi time and I always make it a point to do so. Today being 1st Mangalvara / Tuesday of Margashiramasa a holy month for Hindus, which is by and large known as Khichidi Masa by Konkani Saraswats, I prepared Appos for Lord Ganesha by giving a slight variation to the original traditional method.

** There are so many variations in making these appos and I have already posted a many of them, you can use the label or search option for different recipe and also the step methods, will share a common link for appos and plz. do check, if you are new to preparing this dish. This time keeping the recipe same I just added on multigrain flour to the batter and made it a little bit healthier and they turned out really soft. I always feel, at least I should make a little bit of change in Naivedyam as all will be offering the same old traditional method and even God needs to have a change in taste. Let me add on the simple recipe here, so that all of you can prepare the same as Naivedyam to Lord Ganesha, who will be very pleased. Stay Blessed.

Ingredients :
Chiroti Rava / Fine Rava : 1 cup
Multigrain Flour / Atta : 2 heaped cups.
Ripe Bananas : 1 large sized. (CavendishBananas available in Mumbai)
Jaggery : About 100 – 150 gms cut into small pieces or grated.
Salt : A Pinch
Cardamom Powder : ½ tsp.
Cooking Soda : Just a very small pinch
Cashew Nuts (Optuional) : halved - as much as needed (depends on the number of appos)
Ghee / Oil for deep frying.

** Note : I used Multigrain Flour freely available in the market. The flour consists of wheat, soya, oats, chana, maize and psyllium husk. If not available you can make your own mixture or leave out some of the ingredients and prepare too. If not use a little bit coarse wheat flour.

** Grind the banana cut into pieces in a mixer grinder to a paste. Now add in the jaggery grated or cut into small pieces and further grind till evenly ground to smooth paste with one cup of water.

** Note : I have used the Cavendish Bananas available plenty in Mumbai, you can use any ripe bananas. But if using smaller varieties of bananas to add in more, say about 2.

** Remove the ground paste into a wide large bowl. Now add in a pinch of salt, cardamom powder and the chiroti rava and mix well. Add another cup of water and further mix well. See to it that there are no lumps.

** Now add in half of the multigrain flour and mix all well to smooth paste. Keep adding the remaining flour little by little while mixing the batter till all the flour has been added. Check the consistency of the batter. If too thin add in a little bit of flour. Keep the batter aside for 15 mins, for resting.

** Note : The step of allowing the batter to rest is important. This is done to ensure that the rava and flours absorb the moisture and gets dunked in it resulting in swelling a little bit. The batter consistency should be thick dropping one. If you find the batter a little bit thinner do not be disheartened. Add in a few teaspoons of rava or flour and gently mix the batter. If you have adding in more and the batter has turned out dry on resting add in a little bit of water and mix well. To avoid such mishaps I advice you to add in the slowly little by little so that it does not dry out. Add in only that much rava / flour that gives you right consistency. Now the batter has rested and is ready for removing appos.

** To Remove the Appos / Paniyarams : Just before you start heating the pan, add in the cooking soda to the batter and mix well. Now the batter is ready to be made into appos. When the appo / paniyaram pan is hot add in some melted ghee or oil in each of the dents. Lower the heat and place one single cashew nut in each of the dents (Optional). Now pour a large tablespoon of the batter into each mold / dent of the pan. Do not add more. It should remain within the inner level of the molds. Cover with a dome shaped lid and cook on slow till crispy on the bottom side.

** Note : Add the cooking soda, just about 3-4 minutes before you start to take the appos and not before the resting period. That way you will get spongier appos. Again, addition of soda is optional, you may skip it too. I sometimes add and sometime don’t. For this particular recipe, though I have added on as I have not used any grated coconut, which gives softness too. Also addition of just a small pinch will give you very soft and spongy appos.

** Gently run a blunt knife through the rim edging of each appo and loosen them gently with the help of another spoon turn them over / flip each appo and cook uncovered for a few minutes till done. Remove with the help of a spoon / blunt knife and put it in a bowl kept ready. Repeat the process with the remaining batter till all the batter has been used up. It is better to finish off the batter, but you can store it in the fridge overnight too. Just remove some time before you want to remove the appos.

** “21 Multigrain Godu Appo / Sweet Paniyaram With Bananas” are ready to be served to God as Naivedyam / Prasadam after which you can distribute the same with your family and friends. This is a very easy recipe that can be prepared fast when in lack of time and is a breeze work as there is no heavy grinding involved. So go ahead and prepare them and share them with all your friends. Remember Naivedyams / Prasadam should always be shared to get maximum benefit of Ashirwaad / Blessings.
