** Patrado as known in konkani and alu vadi in Maharashtra is a delicacy prepared using coocasia leaves/ arbi leaves. Prepared masala is spread on the leaves and topping in layers of 3-4 four and then folded over and rolled cylindrical, steamed and served hot either as it is topped with coconut oil or sliced and tava fried too. There are various variations in preparation of patrado, while some are steamed, some are tava cooked after seasoning. Again, the inner masala too can differ using different combinations. I have posted plenty of combinations to which I am sharing a common link below.
** Podi means fries and there are a few differences in preparation of the same which I have explained in each post as is the combination. You can slice and tava fry any patrado, but there is one particular variety of leaf which is known as marala paan ie straight away cut into spirals, dusted with rice powder and deep fried. This delicacy is loved by all amchies however as these leaves are rare and hardly accessible in Mumbai, many of us use the same recipe and go ahead preparing it using colocasia leaves, You can also use malabar spinach leaves for the same and they taste equally good.
** Another variation of step I follow here is while traditionally it is sliced and fried directly without steaming, I steam the rolls for just 10-15 mins as this helps in holding the shape as well as the fries do not absorb much of oil when done so. This tip was shared to me by my dear friend who is unfortunately no more but always stays in my heart as she has been a close one. I do not find the point in repeating the recipe here again as the same has been shared twice except for the leaves.
