"Patrade Masala Sanna Polo (Spicy Dosa) with Onion" ... sanna polo is a traditional a spicy dosa served at lunch/ dinner time with dal-chawal from Konkani Saraswat Cuisine … there are many variations of mix and match with this dosa however today I prepared it with leftover masala of Patrado ie Colocasia Leaves Steamed Roll by adding in finely chopped onions to the mixture … tastes really awesome … Yummilicious ….
** Sanna polo as I have written and shared umpteen times is a spicy dosa served as side dish for lunch/ dinner in Konkani Saraswat Homes and is loved by one and all. There are many variations in mixing of this dosa with different veggies etc. and I have posted many of them. This is one side dish we love in my home and I love experimenting different combos for the same and trust me till date they have all turned out great in taste. Again as you all are aware Patrado ie Colocasia Leaves steamed rolls/ spirals is another famous dish that is again prepared widely in my community and is also enjoyed by one and all. Sometimes the judgement in quantity of masala goes wrong and there is leftover masala of the same. In my home many a times I habitually prepare more masala so that I can prepare these sanna polo with the leftover masala and not only does it tastes great, but also saves time in a few days when you prepare them. You can prepare the spicy dosa by adding on finely chopped onions and cabbage together or you can also prepare with either one of two only too.
** Then again you can add in any finely chopped leafy veggies like methi leaves, drumstick leaves, palak etc and prepare the same too. The choice are so many, however the best of all in taste is the one with addition of finely chopped onions and in my home we are really crazy of dishes with garlic and onions. I few days pack I had prepared patrado and I intentionally prepared some extra masala and put it in the freeze to which I added finely chopped onions and prepared these dosas. I will be sharing a common link at the bottom of this recipe for all the sanna polo posted before you can browse through the same and try them out whenever it is convenient to you. ** Here is the simple method of preparing "Patrade Masala Sanna Polo (Spicy Dosa) with Onion" leftover batter of patrado … My Style …
** To prepare the Sanna Polo ... Take about 3 cups of the masala prepared for making patrado in a bowl. I had used whole moong and rice along with the masala which consists of coconut, tamarind, hing and chilly for making of the Patrado. I am sharing the link to preparing of this particular moong patrado at the bottom of this recipe, plz. do check it out.
** Peel off the outer skin and finely chop finely onions (piyavu/ Kanda), say approx. about 2-3 cups. Add this to the masala in the bowl add in salt to taste if necessary and mix well. Check out the consistency, you should be able to form it to loose ball consistency when you pick up the batter in hand, so be careful and add only that much onion that is necessary.
** In case you find the texture of the mixture to be thinner and falling out when forming a loose ball then either add 2-3 tblsp of Besan (Bengal gram flour/ chane peeta) or rice flour (tandla pitti/ chawal ka atta) and mix well. This will help in binding the batter properly, off course I have not added in any but sometimes do add rice flour.
** Heat an Iron tava/ Non stick tava, when smoking hot, lower the heat to minimum apply a thin film of oil spreading with the help of a tissue then place a large tennis sized ball of the prepared mixture in center of the tava and pat it gently to form a round shape. Be careful, you can wet your palms with a little bit of water as it helps in patting the same better.
** Pour a bit of oil on all sides of the dosa and some on top of it. Now keep the heat on medium and cook till the bottom side is cooked and done, then loosen it with spatula and flip over and cook on the top side too till slightly browned and done. You will with experience know the right time to flip it, but keep a keen watch and don’t let the dosa burn.
** Prepare sanna polo/ dosa with remaining mixture in similar way till the batter is finished. You can put small sized dosas too or medium sized ones, the choice is yours. In case you want to remove small ones say of 4 inches in dia you can add on 3-4 at the same time on a larger sized tava by maintaining some distance say about an inch or so.
** Note : Nowadays we get a large sized non stick tava called mini uttappam tava (posted elsewhere) which has ¼ inch depth 7 round dents of say 3-4 inches. You can purchase it as it is very useful in preparing these dosas, bhakri, small sized dosa etc. they turn out even sized and truly a blessing to be had in your home if you are going to prepare dosas a lot.
** "Patrade Masala Sanna Polo (Spicy Dosa) with Onion" is done and ready to be served. Serve it hot with Dalitoy- Rice or any other dishes for lunch, they taste simply awesome and will be loved by one and all. You can pour over it a tsp of coconut oil when serving too, it tastes really great though in my home we have it as it is as it good anyway.
