"Khichidi-Polo : Moong Dal Polo/ Green Gram Dal Dosa/ Hesru Bele Dose served with Rava- Chana Dal Sweet Khichidi and Coriander- Coconut Chutney" ... whenever i prepare sweet khichidi for Naivedyam, I keep aside some to have it for breakfast next day with polo as in my home we love this combination very much ... Yummilicious .....
** Khichidi Polo is a very famous combo from Konkani Saraswat Cuisine prepared mostly during month of Marghashirmasa/Dhanurmasa which is very pious for us Hindus and also famously known as "Khichidi Masa" among GSB's. This falls somewhere in the month of December and in my home we love the combo and I make it a point to prepare them through the month in different combination. I have often prepared and posted them many times before in the blog too. During Ananta Chaturdashi in many temples they prepare Sweet Chana dal- Rice Khichidi and this time I prepared the same too. As we were relishing the same hubby casually asked if I would be preparing dosa/ polo next morning for breakfast to be served with it which I really had not thought off. Why Not? There is no rule as such that the same cannot be prepared on other days but unfortunately it was too late in the evening to do the soaking for grinding and I was thinking of preparing urad- moong dal dosa as that did not need fermenting and also the soaking time too was not much say about an hour or so.
** Late in the evening my eldest sister rang and as we chatted I just said about the same to which she mentioned she had prepared dosa with only moong dal and gave me details. Well, it was really easy and perfect for two people, so I decided to try out the same and the dosa is before all of you, turned out great and tasted good with khichidi and chutney too. A very simple dosa to prepare and you can serve it with any side dish or chutney of your choice and there is absolutely no need for khichidi, that is just sort of added bonus to serve with. Do try out this simple dosa as it is not only easy but nutritious too as moong dal is considered very good for health and many recommend it even to diabetics. There are many more methods of preparing dosas with minute changes that I will be posting on regular basis so do keep a keen watch out for my Blog and do give me a feedback, it really would be helpful. During the pandemic things are not running as smoothly as we are used to in our life and we have a lot of adjustments to be made, but good food for energy and immunity is must, so go for it.
** Here is my simple Recipe for “Moong Dal Polo/ Green Gram Dal Dosa/ Hesru Bele Dose” … the credit of which goes to my sister Dr.Vijaya Bhat ......
** Wash and soak one cup of moong dal in water for about 2 hours. If you cannot spare that much time, soak it in warm water (not hot) for about 30-40 minutes. Wash well and drain off all excess water and put it in a mixer grinder and grind to a very smooth fluffy batter with just a few tablespoons of water.
** Use water sparingly, the batter consistency has to be thicker like that of idly batter. When almost done add in about an inch of finely chopped ginger (adrak/ alle') and 1-2 spicy green chillies (tarni mirsanga/ hirvi mirchi) and further grind till smoothly blended. Remove into a bowl add salt to taste and mix well. Cover and keep it aside for about 10 minutes.
** To Prepare the Dosa : Heat an Iron/ Non Stick Dosa pan to smoking point, lower the heat to minimum, add a teaspoon of oil+ghee and spread well with the help of a tissue paper. Do not press too hard, as the tava is hot, your hands may get burnt, and you may remove all the applied oil in the pan. I use this method of spreading with tissue to ensure there is no excess oil, as well as there is a thin layer/film of oil on Tava by which you get a crisp bottomed dosa.
** Now, add in about a cupful (approx) of batter with a rounded spatula in the center of the tava and spread evenly into a round circle of about 10-12 inch diameter, just like how you prepare any dosa. Use light motion, do not press the spatula too much lest the dosa will tear. Sprinkle some ghee+oil on sides and top of the dosa. Let the dosa cook on medium heat until the bottom side of the dosa turns crispy and evenly browned.
** When the bottom side is cooked gently loosen the dosa with the help of a flat dosa spatula from all round the rim of the dosa and then gently lift it with the spatula in one go and flip it over and let cook on top side too on medium heat for about 2 minutes and it is done. Remove the dosa from tava and place it on a serving plate and serve it hot immediately. Repeat the process and remove the required amount of dosa's.
** "Crisp fried Moong Dal Polo/ Green Gram Dal Dosa/ Hesru Bele Dose” is done and ready to be served. Always serve dosa’s hot from tava, as they taste best when served crisp and hot directly from tava. Serve the dosa with any chutney/pickle or side dish of your choice and enjoy with your family and friends. I served this dosa with Rava- Chana Dal Sweet Khichidi and Coriander Chutney and we loved it.
** Children love to eat crisp dosa and this is sure to be a hit with them and their friends too and if you do prepare the khichidi too they will definitely love it more. Again you can prepare and serve with onion-potato bhaji another hit combo with dosa. Include healthy dishes in your daily diet and make children aware of our traditional healthy dishes. Home cooked food is always better than store bought one's for growing children.
** Note : Always be careful with addition of water while grinding the dosa batter. Keep adding little by little water while mixing the batter well as you grind and avoid adding water in one go. Add in more water while grinding only if necessary, we need to retain the batter a little bit thicker always so be careful with addition of water, you can always add later on if need be.
** Note : Do not ferment this batter and moong dal gets over fermented within a few hours and is best used within a frame time of an hour or so. Also I do not recommend storing this batter in fridge as it does not remain well, so please prepare only that much how much is needed and also serve the dosa hot as cold ones too do not taste good.
