“Roasted & Spiced Groundnuts (Peanuts)” … The famous Congress Kadalekayi from city of Bangalore … A lovely snack to munch on for those in between hunger pangs or when you enjoy a get together …
** Roasted groundnuts (peanuts) are always available in my home as my hubby loves them and has to have a fistful everyday. I roast them on microwave and it is breeze work. I use the same roasted nuts for all dishes be it for seasoning or making of masala kadla (peanuts). Shobana akka had posted this awesome roasted and spiced groundnuts some time back which is famous in the city of Bangalore by the name of congress kadalekayi. I have often wanted to make this one, but somehow never got the opportunity to do so. Today finally, I went about preparing the same and here it is for all of you. I have no idea how the name came about for these peanuts, so without running into much details I am posting the recipe as it is. I have not changed anything about this recipe and it’s the same as akka posted.

** Ingredients :
Groundnuts / Peanuts / Kadalekayi / Kadlo / Shengdana : 2 cups
Fresh Curry Leaves / Kadipatta / Karbevu : 20 leaves
Asafoetida / Hing Powder : ½ tsp
Turmeric / Haldi : ¼ tsp
Red Chilly Powder / Mirsange Pitti : 1 tsp (+/- as per individual preference)
Pepper Powder / Miri Pitti : 1 tsp (freshly ground)
Salt to taste
Oil : 1 tsp
** Dry roast the groundnuts / peanuts in a thick bottomed kadai on medium flame till evenly and well roasted. Keep stirring to avoid the nuts getting burnt or ovedone. Once they are crisp enough remove and cool and bit. Now crush them well with your hands, this helps in loosening the outer skin. Put it in a plate and swirl & tap to remove the loosened skin. Continue till all the groundnuts are de-skinned. Keep them ready aside.
OR
** Put the groundnuts in a glassware flat dish and Microwave till done. This is faster and in between if you mix them once or twice they get evenly and beautifully roasted. I have been using this technique for 20 yrs now and I simply love this easy method. You may follow any method for rosting. Once roasted follow the same above procedure for de-skin the nuts.
** Heat oil in the kadai and roast the curry leaves till crisp. Remove and keep them aside and crush them well once they have cooled down to be added on later.
OR
** Roast the curry leaves in microwave for a few minutes and they are evenly and beautifully crisp (Without oil). Remove and crush them to be added later. I used the microwave method.
** Now in the same oil ie if you have fried the curry leaves or heat the kadai with oil if you have used microwave method. Add in the crushed curry leaves if you have used microwave method now and fry for few second.
** Now lower the heat to minimum and add in the turmeric, chilly and pepper powder and fry a bit. Now add in the prepared groundnut, salt to taste and mix well for a minute on low heat. Finally add in the fried and crushed curry leaves if you have not used microwave method and mix well.
** “Roasted & Spiced Groundnuts (Peanuts)” or the famous congress kadalekayi is done and is ready to be served. Enjoy this with your family and friends as a time pass any time of the day or at parties, get together, watching television, sports or any gup chups. They taste awesome.
** You can prepare them and store them in airtight container and it remains good for a week. So in case you want to serve them at parties you can do so some days before to avoid later hazzels. Again my another friend suggested serving with onions etc. which I will posting immediately next to this post. Do check on that post too.
