Cauliflower ~ Potato ~ Green Peas ~ Brinjal Upkari / Bhaji ...... A simple upkari prepared with spices and garnished with coconut ...... Goes well with Chapati / Roti / Paratha / Dalitoy - Rice .... Yumz .....
This is a simple Upkari / bhaji that can be prepared in a jiffy if you have all the ingredients. A common bhaji that goes very well with roti or dal chawal. Nothing elaborate in this one and I am sure all of you know or have enjoyed the same at some time or other. So without running into details lets just straight go ahead with the cooking method.
Cut about 250 gms of cauliflower into medium sized florets. Peel off the skin of 1 large or 2 medium sized potatoes and cut them into cubes of medium size. Shell and retain the peas, about 2 cups in all. Cut brinjal also into large cubes say one medium sized about 250 gms in weight. Put all four ingredients in a colander and rinse well under running water. Keep this ready drained aside.
Heat 1 tblsp of oil in thick bottomed kadai, when hot add in 1 tsp jeera, pinch of methi seeds, 1 tsp mustard seeds and when they crackle add in 1 tsp of haldi powder, 2 tblsp of sambar powder and fry for a few minutes. Add in a few curry leaves too.
Now add in all the drained vegetables and salt to taste. Sprinkle some water and mix all the ingredients together till all the vegetables are well coated with the masala. Lower the heat to minimum, cover with a tight lid and let cook. Keep stirring in between. If you find the masala too dry and sticking to the bottom or getting burnt, then sprinkle some water and mix well.
When the veggies are almost cooked add in half cup of freshly grated coconut and mix well. Cover and cook till done. There should be absolutely not trace of water and the upkari / bhaji should be dry with coated coconut and masala. So be careful with addition of water at any step. The vegetables often leave out water of their own, so check and add only if you find it absolutely necessary. The Upkari / baji is done. Serve it hot with roti or dal chawal.
