“Sungta Alley~Piyav Gashi Ambado ghalnu / Prawn~Ginger~Onion~Hoplum Curry” … An awesome fish curry from Konkani Saraswat Cuisine, that tastes awesome when served with Ukade SheetHa (Red Boiled Rice) … Yumz …...
** Prawns are very versatile and can be cooked in many forms. You add them on to any dish and they get blended on well, be it curry, rice item, fries, cutlets, bonda, soups etc. Prawns dishes are a favorite in my home and I prepare them often. The rising costs of prawns are a proof about how much it is loved universally. Children too love prawns very much. In Mumbai we get prawns all cleaned ie the outer shell removed and the vein within too, so it is easier to cook them as the mundane task of cleaning is luckily not there. Though, till a few years back it was not so, and we had to do it ourselves which took up lots time. Coming to “alley-piyava gashi/ginger-onion curry”, this curry is usually cooked with mackerels or pomfret while prawns are usually cooked as panna upkari a spicy curry seasoned with onions or hing uddaka randai ie seasoned with asafoetida and coconut oil. However, in my home we love the flavor of ginger-onion to fish curry and I prepare the same with all types of fishes and trust me they taste yum.
** Addition of Hogplum / Ambado is a matter of choice, as it is added on to bring in tangy / amshe taste to the curry, you can add on bimbul / tree sorrel or kokum / Kudumpuli too or in case you have none of them you can just add in tamarind while grinding the masala. Hogplum are available during monsoon, and I always add them to all masala curries while cooking during season, as I always believe that one should eat whatever is available during season for God has harvested it with some purpose. I always suggest everybody to eat more of seasonal veggies and fruits rather than go in for something artificially created using chemicals when not in season. There are medicinal benefits in seasonal veggies and fruits and consuming them during that particular season is considered to be highly beneficial.
** Here is the Recipe to “Sungta Alley~Piyav Gashi Ambado ghalnu / Prawn~Ginger~ Onion~Hoplum Curry” … My Style …
** Wash 25-30 medium sized "prawns" after the outer shell is removed and the vein is too. Keep them aside ready.
** Wash and cut the ambado / hogplum into 4 pieces vertically if tender or slice the sides and retain the inner seed too if they are not tender. Keep them ready aside.
** Finely chop one medium sized onion and slit 4-5 green chillies leghthwise and keep them ready aside. Also chop one inch piece of fresh ginger and keep it along with them.
** For the Masala : Grind 1 cup of coconut with 4-5 red kashmiri chillies into a very fine paste. Add a small marble sized tamarind while grinding if you are not using hogplum/bimbul or any other sour ingredient for the curry.
** Add the gravy in a wide flat vessel (always use flat wide utensils to cook fish. The fish then can be laid evenly and not topped over each other which tend the fish to break as fish cooks very fast). Add in a bit of water and bring it a thick gravy consistency. Add in the hoplum and w bring the curry to a boil, lower the heat and cook on medium heat till the hogplums are almost cooked.
** Now add in the chopped onion, green chillies, ginger, salt to taste and cook for another minute or so. Finally add in the cleaned and kept aside prawns and gently mix all. Raise the heat and bring to a boil. Once it comes to boil, cook for 2-3 minutes and then add in 1 tblsp of raw coconut oil and gently mix the curry. Remove from fire and keep it aside covered for the flavors to seep in. Do not overcook the prawns or they become like rubber.
** “Sungta Alley~Piyav Gashi Ambado ghalnu / Prawn~Ginger~Onion~Hoplum Curry” is done and ready to be served. Serve the curry hot with rice, it goes very well with boiled rice or even with mildly spiced pulav. Try this delicious prawn curry and enjoy it with your family and friends, I am sure they will love it.
