"Spicy Ajwain~Jeera Chapati (Roti)” … Come monsoon and the dampness in the air in some way or the other creates health issue … it is very important to keep a watch on the food intake … having hot soups is a good option, so is having hot food … Including spices while cooking food is also important, they keep cold at bay … here is a simple spicy roti prepared with wheat flour along with spices that not only tastes delicious but is healthy too … Yumz …
** The secret of making soft roti / chapati is always the mixture of ingredients in right proportions / ratios and kneading it into a soft but firm dough. Again, rolling of roti evenly is also very important and last but not the least is the cooking technique by keeping the tava at right temperature throughout the frying process. I written so much about preparation of roti and also with addition of different flours which you will find in the search option. This particular roti has only one flour ie wheat flour normal attal. By and large roti / chapatti is prepared with this one flour and is relished all round India. Addition of some spices while cooking roti’s during monsoon keeps cough and cold at bay to some extent. Though, it is not 100% dependable if the health condition is worst, in which case you must check up with your Dr.
** For minor aches and even recoveries after health issues, our home foods are quite reliable and in our kitchen there are so many ingredients that give relief when it come to need. Pepper corns, curry leaves, ajwain, jeera, ginger all have healthy minerals and nutrients that really help in combating health issues. Not to forget turmeric and flax seeds, they are a boon to healthy life. I am not an expert in this field, and please do check with your General physician before you indulge in any habit, as each one’s body is different. As for me, I had gone through lots of small health issues that ran on for years, without relief and finally I changed the pattern of food, included healthy options and home ingredients and that’s it, most of the ailments have gone away.
** Here is a simple method For preparing "Spicy Ajwain~Jeera Chapati (Roti)”, My Style ...
** In a mixer grinder add in 4-5 green chillies cut into pieces, 3-4 pepper corns, 10-12 curry leaves also cut into pieces, 1 tsp of ajwain (Oam/Vonvo), 1 tsp Jeera (cumin seeds), ½ tsp hing (asafoetida) powder, salt to taste and grind to a powder form. DO NOT add in any water.
** Remove and add the ground powder into a large wide stainless steel bowl. Add in 1 tblsp of oil (any edible oil will do) and 2 heaped cups of wheat flour (Atta). Mix well into a crumble form, sort of grainy texture.
** Now add in one cup of lukewarm water into the masala ground grinder vessel and swirl well, to mix in any left over masala etc. and add this water also into the bowl and bind to a smooth dough. Sprinkle some water or add in some flour if necessary. Roll the dough into a nice smooth, but tight elastic ball, cover and keep it aside for 15-20 minutes.
** Remove the dough and knead it again. Divide the dough into large lemon sized portions and roll into into smooth balls and keep them aside. Roll the prepared balls in wheat flour, seeing to it that it is fully dusted with flour and roll it out into a round shaped roti/chapati.
** Do not roll the roti very thin, keep it a little bit thick. You can dust in more flour as your roll the ball if you find it difficult to roll the roti, but do add in only that much how much is necessary or else the roti dries out. You will get a round roti / chapati of about 8-10 inches in diameter.
** Heat a tava / non stick pan on high, when hot, lower the heat to medium, spread some ghee / oil on the tava and gently place the rolled chapati / roti. There should be no creases. Apply ghee / oil on the top surface and spread it with the back of the spoon. When roti / chapati gets cooked on bottom side, ie you will be able to see some bubbles on the top, then flip over and cook the top side too till you get brown spotted crispy roti.
** Remove and keep the cooked roti aside. Repeat the procedure with the remaining prepared dough balls, by rolling into chapati and frying them on tava in similar manner. If you do not want to prepare all the roti's in one go and would like to prepare some later on, but the dough in an air tight container and keep it in the fridge. It remains good, jut remove 15 minutes before having to prepare the roti.
** "Spicy Ajwain~Jeera Chapati (Roti)” is done and ready to be served. Serve them hot with any side dish curry or bhaji of your choice with some curds and pickle as an accompaniment, it tastes awesome and is very healthy compared to plain roti/ chapati. I served this with Red Bean~Carrot Dry Curry (Tambdi Bee~Gajar Kismuri along with Curds, lemon pickle and Sun-Dried Wheat Shevai (Gonva Sevai Panna) and it tasted awesome. This was my satvik meal for today as it was Ekadashi an auspicious Lord Vishnu's Day.
** I am not into much making of any Upvas / Fasting as it effects my health, so I refrain from eating Non-Vegetarian and Rice dishes on these auspicious days, that's it and today was so too.
