My Simple "Combo Meal" Lunch ... "Masala Milk (Dhoodh), Red Bean Hing Curry (Tambade Beeyeche Hinga Randai, Coriander~Coconut~ Chutney, Biscuit Ambado (Urad Dal Bondas/Vadas)" .... Yummy Yumz ...
** Today’s is a simple lunch that has no rice ingredients in the meal pattern. Today is Ashadhi Ekadashi Day, which is observed as a fasting day by many Hindus all over the world and is a very important day for 'Vaishnavas", being the followers of Lord Vishnu. It is strong belief amongst Hindus that by observing Ashadhi Ekadashi fast they will be blessed with peace, prosperity and happiness. I have written a short article on Ashadhi Ekadashi for those of you who are interested and the same can be read using the search option or on the right hand side label section that says spiritual stories. There are many more such small stories written by me to the best of my knowledge from reading articles or hearing the same from relatives and friends.
** Coming to Upwas/Fasting, I have been following a similar pattern for many years now. We Konkani Saraswat’s avoid eating rice and those dishes prepared using rice in any form druing Ekadashi days. Though there are millions of people who fast without really eating anything, which is highly appreciated, I myself or anybody in my home for that matter do not observe such a hard fast as it is not feasible for us. So I prepare dishes that do not include rice in any form during Ekadashi days for both lunch and dinner, also I avoid any other food during remaining part of the day. Milk again can be had so mostly it’s sweet masala milk during such days as it boosts energy. Again, fruits can be consumed specially bananas and sometimes I do prepare banana milk shake or banana shikrana.
** I have included my today’s combo meal lunch, and this meal can be relished even if you are not fasting or on any other occasions too. Just add in a few more dishes like maybe rice or roti and it is a full meal. Again, I am only sharing links to the four dishes in the picture without re-writing the same as you all know it is actually not in interest of both the editor and the reader. No point in typing out the same thing again and again or even copy pasting it. 1..“Masala Milk” … This is a delicious hot beverage served during festive seasons as we generally avoid curds at times, also the addition of dry fruits in the masala makes it more nutritious during fasting etc.

2.. “Red Bean Hing Curry / Tambadi Beeyeche Hinga Uddaka ghalnu randai” … This is a delicious dish prepared with rajma / red beans by simply seasoning with hing and coconut oil … You can also add on veggies like suran, keerlu, etc. along with the same too …

3. “Coriander~Coconut Chutney” …. An awesome chutney that can be served with any dish of your choice like dosa, chapati, roti, poori, biscuit ambado, vadas, cutlets, sandwiches etc. The list of choice is really endless as this chutney tastes awesome when served with the above dishes …

4. “Biscuit Ambado / Urad Dal Bonda / Vada” … A delicious south Indian snack that is famous in every home and is available in the form of vada’s throughout the world … Tastes awesome when served with chutney or sambar … yumz …
