Mooga Dalitoy / Spiced Moong Dal.


"Mooga Dalitoy / Spiced Moong Dal" ... Dal's always hold a special place in our daily diet and at times it gives pleasure to our tastebuds when there is a change in the same ... Though Dalitoy prepared out of tuvar /tur dal is close to every Konkani Saraswats heart sometimes change is necessary for healthier lifestyle ... Here is a delicious dal full of spices that tastes awesome when served with a wedge of lemon along with hot rice and other dishes ... Yummilicious ..... 

** Dalitoy prepared from tuvar dal / tur dal / tori dali, has always ruled and occupied a prominent place in both the heart and homes of every GSB Konkani Saraswat and will remain so for eons to come, nothing can change that. But at times one does need to adapt changes in cooking style for healthier options in food. Moong dal comes the closest in relation to tuvar dal but smaller in size and the taste too differs a bit. It is believed that tuvar dal has higher uric acid content and at times Doctors advice one to curtail on its use specially if Diabetic or BP patient. Though Moong dal does not match in taste with tuvar dal, it is the next best thing when it comes to preparation of dal using other options. I have already posted two types of Varna / Dal in blog before which is prepared too in many Konkani homes. Today however, I have prepared Moong dalitoy using lots of spices along with ginger, hing etc. An awesome Dal to be relished with rice and othr dishes. However, do remember to serve this dal with a wedge of lemon as addition of lemon while eating enhances the taste of the dal very much giving it a lovely tangy taste. Without running into further explanations let us move on to the recipe. 

** Here is my simple recipe for an aromatic "Mooga Dalitoy / Spiced Moong Dal" … My Style… 

** Wash 1 cup of moong dal / mooga dali well and add it in pressure cooker pan along with 2.5 cups of water and pressure cook to 3-4 whistles on medium heat. Let the pressure fall on it own. Once you are able to open the lid, do so gently and carefully taking care to stay away from the heat. 

** Add in the cooked dal in a larger thick bottomed vessel and churn it well to get an even and smoothly ground dal. Add about 4-5 cups of water and mix well. Be careful with water and do not add all in one go keep adding and mixing till the required thick consistency of your choice is got. 

** Keep the dal on medium heat to boil. Add in 1 inch of grated ginger along with 6-8 chopped less spicy type of green chillies or 5-6 spicy green chillies cut into pieces. Once the dal comes to a boiling point, lower the heat and let simmer while you prepare the tempering/seasoning for the dal. 


** For Tempering/Seasoning : Heat 1 tblsp of fresh homemade ghee along with 1 tblsp of coconut oil or any other edible oil in a small pan, when hot lower the heat and add in 1 tsp of mustard seeds, 8-10 methi seeds, ½ tsp of jeera, ½-1 tsp of hing powder, ½ tsp of haldi powder, 2-3 whole small round red chillies or long ones cut into pieces, 8-10 curry leaves and fry for a minute. Pour this over the dal and mix well. 

** Mix the dal well, add salt to taste and check the consistency and add on more water if need be. Now add a handful of finely chopped coriander leaves and let simmer for just a minute or two and remove from heat. Keep this covered aside for 10-15 minutes for the flavors of the seasoning to get infused in the dal, this is very important step and I suggest you follow it. 

** "Mooga Dalitoy / Spiced Moong Dal” is done and ready to be served. Always serve this dal steaming hot with a half a lemon beside the same to be squeezed and added on while relishing. Addition of lemon enhances the taste of this dal a lot and tastes great when had with hot rice along with other dishes. Do try out this dal for a change from the regular tuvar dal dalitoy as this is definitely a healthier one. 

** Moong dal or Whole Moong is very healthy compared to other dals and is also suggested by Doctors and Dietitians to be included in our diets as they are friendlier than tuvar dal or other dals which have higher uric acid content and is not so good for Diabetic or Bp patients or for that matter people with other health issues.
