** For Konkani Saraswat's the word Khichidi can means a dish prepared with two or more ingredients either in a sweet way or in spicy flavor. By and large the sweet one's are much more famous than the spiced one's and are prepared as Naivedyam on many a festive occasion. The spiced version has caught up only in the recent decade or so in our community as it is healthier for consumption specially when a person wants to go light. That is the very reason why till a decade back or so, we knew only about slightly bland khichidi prepared out of rice and moong dal slightly mushy. Changing of times and interest in food has made people much more innovative and now almost everybody is ready to experiment in their kitchen for new options. Same is the case with me, I love to try out new dishes, giving the older ones twists and changes and making them much more tastier.
** This is a lovely aromatic khichidi that tastes best when relished steaming hot with either dal or curds, though personally I prefer onion raita with it. I have made it aromatic with the addition of mint leaves and spices and it tastes really good. Millets as you all know are the in thing now and are considered to be good for health. I usually prepare khichidi with rice and moong dal, but thought of giving a change over with addition of little millet in place of rice. Millets are slightly bland and heavier on digestion front, so cut down on the amount and yes this is best relished on the same day and leftover does not taste that good, though you can reheat it and have the same. Without running into much details, as there is nothing much to write about a khichidi meal, I am sharing the recipe right on. Do try out this delicious dish and enjoy with your family and friends.
** Here is my simple recipe for "Little Millet -Green Gram Dal Mint Flavored Spiced Khichidi (Sama- Moong Dal Pudina Flavored Spicy Khichidi)" …. My Style ….
** In a vessel add in one cup of Little Millet (Sama) along with ¾ cup of Moong Dal (Green Gram Dal) and wash the two together well. Drain off the excess water and put it in a pressure cooker pan with a large pinch of Salt, 1 tblsp of melted Ghee and a large pinch of Haldi (Turmeric Powder). Add in 4 cups of Water and pressure cook on medium heat to 3 whistles. Let the pressure drop on its own. Keep this ready aside.
** For Green Masala Paste : In a mixer grinder add in ¾ cup of Pudina (Mint) leaves, 1 cup of Dhania (Coriander) leaves, few Curry leaves (Kadipatta/Karbevu), 6-8 Green Chillies cut into pieces, ½ inch piece of Ginger and 2 cloves of Garlic and grind to a smooth paste with little bit of water. Remove and keep this aside too ready.
** Peel of the outer skin of one large sized Carrot (Gajar) and cut it into half inch sized cubes. Wash them in water and put it in microwave safe glassware and cook for 2 minutes or in a pan/vessel with little of water and cook till 90% done. You can use either method. Keep this ready aside.
** In a thick bottomed kadai/pan, heat 1 tblsp Ghee + 1 tblsp Oil, when hot add in 2 pieces Cinnamon (Tike Sal), 2 Green Cardamom (Ellaichi/Yelu), 3 Black Cardamom (Moti Ellaichi), 8-10 Black Peppercorns (Miri), 2 Star Anise, 6-7 Cloves (Lavang), few Curry Leaves (Kadipatta/Karbev) and fry for a minute or two. Now add in ½ tsp of Kashmiri Red Chilly Powder followed by ground green masala paste and fry for 2 minutes.
** Add in the pressure cooked little millet with green gram, salt to taste and 2 cups of hot boiling water and mix well taking care to see that there are no lumps. Cook on low heat till the water has almost evaporated. Finally add in the cooked carrots and mix well. Cover and cook on low heat till done. When done add in a tablespoon of Ghee/Toop on top, cover and leave it aside for 20 minutes before serving it hot.
** "Little Millet -Green Gram Dal Mint Flavored Spiced Khichidi (Sama- Moong Dal Pudina Flavored Spicy Khichidi)" is now ready to be served. You can serve this either with dal or curds. I personally love it with curds, but since my curds stock was over and I was in a hurry, I prepared ginger dal to be served along with the khichidi which is also a lovely combo. You can serve it with any vegetable raita too specially simple onion raita, tastes great.
