"Combo Breakfast : White Chana (Kabuli Chana/ Chickpeas) Upkari (Bhaji) served with Pova Chutney (Seasoned Spicy Beaten Rice) topped with finely chopped Onion” … combo packs be it for breakfast or meals have been on the run for ages and our ancestors have been following this down generations and are still a practice in many GSB Konkani Saraswat homes ... this is one of them served as breakfast or as snack at events … it’s perfect and awesome, we love it in my home and I am sure it will be loved by all in your home too … Yummilicious .....
** As mentioned in the title combo packs ie combination of certain dishes served along with particular dishes be it for breakfast or lunch, were in practice for over generations now and the practice has been followed by many of us to date. I am not sure about other communities but this is rightly so in GSB community and some are so tasty when relished in combo that it makes me wonder at our ancestors knowledge and intelligence about combinations, their preparation, way of serving, taste etc. to create combos.
** Amma used to follow this pattern and I learned all of them from her and try to follow it in my food habits. Some of the combos that come instantly to mind are khotte/ idly usli prepared from leftovers, these are made more appetizing by serving them in combo with either steamed Nendrabale Kele (Banana) or any bajia/ bajo/ fries. Then there is shevai panna ie sun-dried seasoned seviayan/ idiyappam served with sweet jackfruit/ cucumber idlies etc. there are many more which I will share as and when I prepare.
** One more thought on the combo packs I would like to mention here is the wise decision on food health front our ancestors made. If we observe the combinations keenly, you will notice the balancing of sweet or fried item prepared with a simpler seasoned healthier item such as usli etc. This shows they believed in consumption of sweet and fried items in limits, isn’t that what these days the Dr’s and Nutritionists are promoting, well it was all laid down in platter perfectly for us, we ignorantly messed everything.
** It is never too late to fall back on our roots and try to implement them a little bit if not all slowly- steadily one at a time and in no time we will be back to our roots leading a healthier lifestyle, so go for it and you will never regret when you see your coming generations leading a good healthy lifestyle. It is not as difficult as it looks, we just need a little bit of pre- planning and these days we are lucky to have access to network where you will find plenty of Blogs sharing so many recipe, just pick the right one’s.
** Coming to this combo of Chane Upkari/ Bhaji with Pova Chutney, it is a common dish usually prepared by GSB Konkani Saraswat’s home. However, in the southern parts brown chana (whole Bengal gram) is used more often than the white chana (whole Bengal Gram). I have shared both of them in the Blog and you may choose any to be served in combo here. However, in my home we always prefer white chana/ chickpeas as they are soft textured and sweeter, you may use any your family prefers.
** You can add any veggie like raw banana/ sweet potato etc. while cooking along with the B/ W Chana, these are also included in the Blog. Remember, this is a healthy side dish that has good levels of protein and is suitable breakfast item. There are also plenty of other options, just go ahead, try them and enjoy.
