Batate Usli / Potato Bhaji (1) .... goes well with Poori / Roti
Wash 5-6 medium sized potatoes well under running water (with skin). Pressure cook them adding some water to 4-5 whistles. Let the pressure drop, open the lid and let cool a bit before you gently remove the skin. It comes off easily. When it’s bearable hot chop into 1 inch sized cubes and keep it ready aside.
Now heat 2 tblsp of oil in a thick bottomed kadai, when hot lower heat to medium and add ½ tsp of urad dal, when the colour changes slightly add in the following one by one, ½ tsp jeera, ½ tsp rai (sasam) when they splutter add in 2-3 green chillies chopped to pieces, 9-10 curry leaves, pinch of methi seeds(Op), ½ tsp haldi powder, ½ tsp hing powder, fry for a minute and then add in the cubed potatoes and mix well, cover and let cook till well mixed for about 5 minutes.
Remove from heat add in 2-3 tblsp of finely chopped coriander leaves and juice of half a lemon (squeezed fresh). You can add a tblsp of freshly grated coconut also. Mix well and serve hot with plain or spiced poori / chapati / paratha.
