Grate one large Bottle gourd (about 1kg). Put the grated gourd in a thick bottomed kadai with 2-3 tsp of homemade ghee. Fry well and let cook on its own juice till done. Keep stirring in between to avoid the gourd getting burnt.
Add about ½ litre of milk and 2-3 cups of sugar (You can use gur / gud too). Cook on medium heat till the bottle gourd thickens and leaves the sides of the pan.
Add in ¼ tsp of cardamom powder, pinch of saffron and half a cup or finely sliced almonds / cashews. Serve hot or cold with puri or as it is.
