"Ambuli Pachodi/ Spiced Raw Mango Pieces" … a delicious spicy- tangy snack that can be served as a salad along with chanburo/ puffed rice mix or any other dishes ... these are best prepared from ambuli's/ raw mangoes that are ekdum amshe' meaning too much tart in taste … the addition of spices balances the taste taking it to a khatHa- teekHa effect which is extremely scrumptious … every Amchigale/ Mangalorean will vouch for the one’s relished during ratha saptami (Kodial Teru/ Cart Festival) available outside Shri. Venkatramana Temple … try it, tastes awesome … Yummilicious ….
** Raw Mango Pachodi is a sort of salad with addition of spices served in southern parts of India specially Mangalore. It is just a mixture of raw mango sliced into fine small pieces and mixed with spices. This is a dish we enjoyed throughout our childhood during holidays at mid morning and to date is available during the car festival ie Ratha saptami time in Mangalore. My parents always took us to temple and after taking pradakshina of ratha (teru) and offering our kanika, wee children used to enjoy eating this ambuli pachodi with chanbure upkari at a famous eatery just outside the temple.
** At home too whenever raw mango was available, we picked a few that were extremely tart in taste and prepared this dish and relished it to heart’s content. You can enjoy this anytime of the day as it is sort of time pass dish, but in limits as raw mango though is tasty with loads of healthy nutrients, yet it is imparts a little heat to the body. Again, too much tangy in taste at times can increase vata or pitta dosha in some people, so be careful, a little bit goes a long way. During our childhood raw mangoes were available during summer, however these days they are available almost all round the year.
** Here is my simple recipe for "Ambuli Pachodi/ Spiced Raw Mango Pieces" … my style, do try it and enjoy with any side dish …
** Wash well, wipe clean, one large sized “Ambuli/ Mavinakayi/ Kairi/ Raw Mango”. Slice off the stem portion and discard the same. Now slice the sides/ edible portion and discard the inner seed. Now further cut the slices into small pieces and collect in a bowl. The pieces should be finely chopped for preparation of pachodi, otherwise it does not turn out tasty, so slice them accordingly with sharp knife.
** Note : If the outer skin of raw mangoes and thin in texture, then you may retain the same and if too thick then do slice them off as thinly as possible. I usually retain the skin unless its too thick, as we like the crunch it adds, however in many homes, they thinly slice of the outer skin and then cut the raw mango to pieces. You may follow any method you desire, it’s individual choice, both taste good.
** Spices to be added for Pachodi : Add to the finely cut raw mango/ ambuli pieces;1-2 tablespoon of sambar powder, ½ tsp of hing (asfoetida) powder, 1 tablespoon of coconut oil (nariyal tel/ narlel tela), 1 tsp of kala namak (black salt) and toss all the ingredients well together until all pieces are evenly coated.
** Note : I have used store bought sambar powder and in case you do not want to add it for any reason of your own, you may add any of your favourite spice masala too. You can also replace it with a mixture of Kashmiri red chilly powder+ coriander powder+ jeera powder. Addition of spiced masala is always a matter of choice, how sambar powder tastes great, so try it once before you make your own changes.
** Note : You can replace coconut oil with olive oil or any other edible oil of your choice or is available at home, do give coconut oil a try, it has a unique taste of its own and is very good for health unlike the false propaganda it was given for decades. Again, addition of kala namak too can be replaced with any other table salt.
** "Ambuli Pachodi/ Spiced Raw Mango Pieces" is done and ready to be served. Always served pachodi immediately on preparing the same lest it loses out on taste. If left to rest the water content in the raw mango seeps out along with the masala added which really makes the whole of pachodi turn into a mess. Pachodi is one dish that needs to be prepared just before serving including the chopping of the raw mango, please do not cut them prior to mixing, just try it once and you will enjoy this simple dish and as mentioned you may increase or decrease the spice content as per your family taste.
