"Batata Bajia Pav SookHi Losun Chutney ke SaatH / Potato Fritters Sandwich with Dry Garlic Chutney / Powder" .... A delicious bajia pav that tastes awesome during winter when the chill sets in and you want to have something hot and spicy as an evening snack .....
** Winter season and deep fried snack go hand in hand. Almost everybody likes to bite into spicy Vada Pav in Mumbai throughout the year but specially so during winter. The aroma of hot samosa / vadas / bajias being fried that mingles in the air is something hard to resist. Sometimes I have this as my dinner after which I enjoy steaming hot turmeric or masala milk and its a cosy warm night then for me. Simply bliss. When in hurry and you do not find the time to prepare or if you want to have a quick spicy deep fried snack, just slice potatoes into thick slices and dip them in besan batter and deep fry the same. Add on some spicy chutney powder to the pav slices (bread) put one bajia in the center and you have your bajia pav ready. You can prepare these with any type of bajias, though in my home it is most of the time either potatoes or onions. Enjoy them when they are hot.
** Here is my simple recipe for "Batata Bajia Pav SookHi Losun Chutney ke SaatH / Potato Fritters Sandwich with Dry Garlic Chutney / Powder" ... My Style ...
** Peel the skin of 2 large sized potatoes and cut them into thick slices of about 1/4 inch thickness. Soak them in water to which a pinch of salt is added for about 20 minutes. Wash well, removing 2-3 washed water, drain off all excess water and pat them dry with a thick towel and keep them ready aside.
** To Prepare the Batter : In a bowl add in 1 cup of besan (Bengal gram flour), 1-2 tblsp of Kashmiri red chilly powder, ½ tsp of coriander powder, ¼ tsp of jeera powder, ½ tsp of hing powder and salt to taste. Mix all gently. Add in enough water to bind into a thick paste. The paste should coat the back of a spoon thickly and not slip off easily. Check the collage picture for the same.
** Note : You can increase or decrease the chilly powder as per your taste.
** Heat plenty of oil in a thick bottomed kadai for deep frying. Once it reaches smoking point, lower heat to medium and wait for about 5 minutes for the oil to reach correct temperature.
** Now dip each pieces of potatoes into the batter and swirl it so that it coats the potato evenly on all sides, gently leave it into the hot oil. Add in a few pieces at a time depending upon the size of the pan and the amount of oil heated.
** Allow the potatoes to cook for some time on medium heat. Then stir it and flip it over and cook other side, Keep stirring the bajia to cook evenly from all sides and from within. Once the potato bajia turn reddish brown in colour remove into an absorbent paper and keep it for a while for the excess oil to drain off. Continue the frying process with the remaining slices till done in similar pattern.
** To serve them as Batata Bajia Pav ... Slit the 2-3 pavs (Mumbai Bread) horizontally keeping the end of it intact. Open it like the lid of a box, apply Theekha Meetha (Spicy-Sweet) chutney and dry losun (garlic) chutney and place one bhajia in center of each pav and serve them hot as a snack, though I had it for dinner.
** Note : You can apply any chutney dry or wet that is available in your home or that which you prefer. You can also apply molaga podi if you do not have any other chutney powder ready too. Do try this simple snack and serve to your family and friends during winter time and look at the joy on their faces when they relish them.
** Here is a simple way to cut down the spice while serving of children ... Just apply a later of thin homemade butter to the bread slices and just sprinkle some chutney powder over it, then place the bajia in the center and cover up and serve it to them. Children usually cannot tolerate the spice level that we elders too and it is always better to cut down the same while serving it to them. Also butter is good for the health of growing up children.
** Note : The same Bajia Pav can be prepared with any bajia prepared using different types of veggies as per your choice. I usually prepare any one of these, ie potato, onion or chana dal vadas and they all taste great. I have many more veggie in mind that I want to prepare them with, sure to post them as and when I prepare, till then enjoy this one with your family and friends.
