** A simple Naivedyam prepared with coconut milk and sun dried rice shevai/ string hoppers/ noodles. I have used both shevai and coconut milk from stores that are easily available almost all round the world. Once again, without running into details, let me straight away share the recipe of this simple dish as it is already a delayed post for over a month and I ask all my blog followers to excuse me for the same. ** Here is my recipe for “Rice Shevai Kheer / String Noodles (Hoppers) Payasam” … a simple one prepared in my own way …
** I have used sun- dried store bought rice shevai/ string hopper here that are easily available in southern parts of India in all stores. Wash about 2 cups under running water and keep it aside drained and ready.
** Bring to boil about 1 liter of water and then add in the drained rice sevai and cook till almost done. Then add in about 100 ml of thick coconut milk and mix well, once it starts simmering slowly add in about 1.5 to 2 cups of sugar and mix well.
** In a small bowl add in 1-2 tsp of corn flour and mix it with a little bit of normal room temperature water, till it has mixed well and there are no lumps, add this to the cooking sevai in coconut milk and keep stirring well till it thicken remove from fire.
** Heat 1 tsp of ghee, when hot add in a few cashew nuts and raisins and fry till lightly colored and pour it over the kheer. Cover and keep the kheer aside for 30 minutes to settle down well and it is ready to be serve.
** “Rice Shevai Kheer / String Noodles (Hoppers) Payasam” is done and ready to be offered to God as Naivedyam and thereby distributed among family and friends. A simple, tasty and very easy to prepared payasam if you have all the ingredients at home.
** Do try out this simple payasam on festive days and serve them to young and old alike and they are all sure to love them. You can also serve it at room temperature as it taste great.
** Note : You can also use freshly prepared rice shevai/ string hoppers for this recipe. In which case there is not need of cooking in hot water, just add in the same in coconut milk and bring to boil and rest method as above.
