Spiced Simple Yellow Rice.


Spiced Simple Yellow Rice .... Goes well with Spicy Chicken Curries ...........


I have used pressure cooker pan here for this particular rice as there no much procedure as such in making of this yellow rice. This is a simple coloured rice with little bit of spices to enhance the rice flavour usually prepared to serve with very spicy curries like chicken or egg. You can use any other method you prefer, like that of preparing in kadai adding in hot water in double the ratio. But I suggest you use pressure cooker pan as you get really good results for this one as no vegetables are added which may otherwise get mashed or over cooked.


Wash and soak 2 cups of jeera / basmati rice in plenty of water for 30 minutes. After that wash again and let drain in a colander till all the water gets drained off.


Heat ½ cup of ghee / clarified butter in a pressure cooker pan, when hot and it melts add in 1 tsp of pepper corns, 2 tsp of jeera, when the jeera splutters add in 1 tsp of haldi / turmeric powder and immediately add the drained rice and mix well. Add salt to taste and 3.5 cups of water and mix well. Pressure cook on high heat for 3 whistles. Remove from fire and keep aside, till pressure drops on it own. Remove the lid and let cool a bit, say for 15 minutes before you remove the rice. This will ensure that the rice remains whole while removing. Serve with spicy chicken or egg curry.
