Beetroot Oats Cutlets.


Beetroot Oats Cutlets With Hari Bhari Mooli Lasooni Chutney And Sweet Chilly Garlic Sauce, + A boiled Egg ........


Cutlets are something everybody relishes. Hot cutlets with green chutney and ketchup is a delight to eat at snack time. I have already posted cutlet recipe before. This one is a bit different. I call this a healthy cutlet version as i have not added breadcrumbs or cornflour to the cutlets for binding. Instead I have used oats as a medium of binding for the cutlet and also cut down the amount of potatoes otherwise used while making cutlet. I am sure all you will love this cutlet. I Wanted to post this awesome cutlet recipe a few days back itself … but somehow could not find the time to edit the cutlet recipe …. I made these cutlet the very next day to after making the chutney as I wanted to taste it with the Hari Bhari Mooli Lasooni Chuntey and Sweet Chilly Garlic Sauce ……. The combination was really really good. Since I have already posted the other two recipes … I will not repeat it again, but will give the link at the end of the cutlet recipe. Here is my recipe for Cutlets.


Ingredients :
Potato – 1 large sized.
Beetroot – 1 large sized or 2 medium sized.
Carrots – 2 medium sized.
Corn kernels – 2 cups.
Oats – 1 cup
Salt to taste

For making the mixture:
Oil – 2-3 tblsp.
Garlic 2-3 cloves.
Ginger – ½ - 1 inch piece.
Red Chilly Powder – 1 tsp.
Coriander Powder – 1 tsp.
Jeera Powder – ½ tsp.
Fennel Powder – ¼ tsp.
Garam Masala Powder – 1 tsp.

For shallow frying – about 1 cup oil.


In a kadai add 2-3 tblsp of oil, when hot add 2-3 finely chopped garlic, when they turn light brown add in 1 tsp of finely chopped ginger followed by 1 tsp red chilly powder, ½ tsp of coriander powder, ½ tsp of jeera powder, ¼ tsp fennel powder and 1 tsp of garam masala powder. Fry for a few minutes and add in the chopped vegetables and fry on low heat for 5-10 minutes. Sprinkle some water only if necessary. Remove and keep aside to completely cool. The mixture should be very dry.


When the mixture is completely cooled add in the mashed potato, 1 cup of rolled oats, salt to taste and mix well. The mixture should be very dry and should come to binding consistency when you take some of the mixture and try to shape it. It should not break up or crack up. Cutlet mixture is ready. Keep this mixture in the refrigerator for some time. Say about an hour or so. You can prepare this previous day and keep it overnight in the refrigerator too.


Remove the cutlet mixture from the refrigerator. Heat 1 cup of oil in a shallow / broad pan and bring to heat. Once the oil is smoking hot, lower the heat and wait for 5 minutes. Shape the mixture into desired shapes, I gave them heart shape and roll in finely powdered oats and fry till done on both the sides. Continue with the remaining mixture. 


Cutlets are ready. Serve the cutlets hot with any green chutney and ketchup or sauce of your choice. I served them with Hari Bhari Mooli Lasooni Chutney and Sweet Chilly Garlic Sauce.
