Nachani Oats Duddali.


Nachani / Ragi Duddali With Multi Grain Oats ........... I used Quaker's Multi Grain Oats having a mixture of Oats + Wheat + Barley And Ragi ..........


Duddali is a jelly / pudding sort of dish prepared usually by using Kuve Pitta a powderd form of atta available down south similar to arrowroot. Duddali can also be prepared using nachani powder / ragi powder Which is also very healthy as ragi is full of calcium and is very good for both growing children as well as elders. Good for digestion too. I had some Quaker’s Multi Grain Oats which is a combination of oats, wheat, barley and ragi ready packet at home. I wanted to use this up. Simple oat’s porridge is not much liked at home, but then I insist we eat it, so for a change thought of using it up to make duddali, which I am sure would be relished. I added some more ragi powder to the mixture and made duddali adding milk to it. A healthier version duddali.


Ingredients For making of Nachani Oat's Duddali : 
1 heaped cup of multigrain oats which is a mixture of oats, wheat, barley and ragi. 
1 cup fine nachani/ ragi/ finger millet powder sieved.
2 cups of sugar. 
4 cups of full fat milk + 1.5 cups of water. 
1 tsp of cardamom powder.
Apply some ghee (melted) evenly on a tray or plate and keep it ready aside.

Mix all the ingredients except cardamom powder and milk to a smooth mixture with just enough water. See that there are no lumps. Keep this aside covered for 30 minutes. Now add milk to it and mix well. Pour this in a thick kadai and cook stirring on medium heat till it thickness a bit. Do not at any point leave it unattended. You have to keep stirring so that the mixture gets evenly thickened. Takes about 20-25 minutes maximum. Add in teaspoon of cardamom powder.


Once it starts to thicken lower the heat to minimum and keep on stirring till it turns jelly like with mirror glaze and also leaves the sides of the kadai. Remove from heat and pour it on the prepared tray in one go. Flatten it to make a flat even level with the help of the spatulla. Let cool completely. Cut the Duddali into desired shapes and serve it chilled.
