These omelets are made by directly breaking eggs on hot pan, which is smeared with butter / ghee. The shell should be broken with the help of the blunt side of the knife in one go. This will need a bit of practice a few times. Just watch any video on the subject on You Tube for you to get the right picture. One should be careful while preparing these omelets as when you break the shell, pieces of the same should not fall into the pan on which the omelets are being prepared. You should hold the egg on your left hand and give a good tap at the center of the egg with your right hand in one go. Then part the two shells gently allowing the egg to get dropped into the pan without shaking it too much so that the egg yolk remains unbroken. The white part will spread in a round shape as it is thinner in texture than the egg yolk. You can also use ring moulds if you have any to obtain the shape you want. These are available in the market nowadays.
For Making the Sunny-Side-Up-Eggs :
Heat a small pan and smear it with ghee / oil, lower heat. Gently break 2 eggs directly over the pan within a height distance of 6 inches. Let cook on bottom side till well settled. Sprinkle some coarsely powdered pepper powder and salt. There are 3 ways in which you can continue with this omelet. The choice is as per the taste of each individual as some do not like the yolk half cooked or tender. Serve the omelette with tomato ketchup and bread.
** You can serve with as it is by gently sliding off the omelette into a plate with the yolk part half cooked.
** You can cover the pan with a lid and cook the omelette till the yolk gets cooked, in which case you will get a white film over the yellow yolk.
** :You can flip over the omelette and cook it in which case the yolk will get flattened out.
