Duddhe Podi / Red Pumpkin Tawa Fries .....
Slice off the thick outer skin and clear off the inner seeds of 250 gms of pumpkin Duddhe and cut into slices of medium thickness. Rinse in a colander and allow all the excess water to drain off properly and completely.
Put pumpkin pieces in a wide bowl. Add 1 tsp of red chilly powder, ½ tsp hing powder, salt to taste, pinch of haldi (Optional), few drops of vinegar (Optional) and mix well. See that all the slices get coated with the spice mixture evenly. Put all the pumpkin pieces in a box and put it in the fridge for 30-45 minutes.
Remove the pumpkin pieces and roll them to dust evenly on fine rava (chiroti rava) or rice flour. Dust off the excess flour / rava and fry on a hot tawa adding and brushing some oil to it. Keep the heat on medium for a few minutes and then fry them on low heat for 7-8 minutes.
Flip over and fry the other side on medium heat for another 3-4 minutes. Remove and serve hot with any accompaniment of your choice.
