** I always feel guilty of not doing enough justice to my Blog; I know there is still a long long long way to go, not to mention the load of recipes that need to be blogged. While there is a huge backlog in my draft folder there are much more to be prepared, clicked, edited and shared. I have been meaning to share this one post for over 4 months now, but somehow could not get round to editing. There is no recipe as such for this one as I always prepare it with ramdan prepared with idly batter or with idlies themselves. You just need to slice them on medium thickness and then tava fry with ghee.
** I suggest you use homemade cow’s ghee for best result though you can use coconut oil if desired too, however I always prefer ghee as it tastes awesome fried crisp outward yet remains soft within. These fries can be prepared with any prepared ramdan/ idly of your choice, but trust me, idlies prepared with addition of kulith (horse gram) taste the best. There is something about kulith that enhances it taste when prepared as idly or khotto too and in my home it is a regular almost twice a month. ** Here is my method of preparing “Tava Fried Kulitha Ramdana (Horse Gram Idly) Slices” … my style; try it, tastes awesome …
** Firstly you will need prepared and ready Kulitha Idly/ Ramdana for this recipe. I keep aside a large steamed and ready ramdana in fridge to be prepared into tava fries for the following day breakfast as it falls handy that way. Again, when kept in fridge for a day, it is easier to slice them into neat and tidy cuts.

** Ramdana usually is a large round Idly of about 2 inches in thickness. You will first need to cut them into required sized pieces and then further slice them to reduce the thickness to say about 1/3 inch for proper tava fries. First cut the required number of slices from the prepared ramdana and keep them ready aside
** Heat a large size non stick or Iron pan, when hot lower the heat to minimum, apply a tablespoon of homemade ghee and spread evenly all over the pan. Then place each slices on the hot tava and let fry on medium heat for about 4-5 minutes. Apply some melted ghee on top surface of the Idly pieces too.
** With the help of tongs flip over each piece when it is fried crisp on the bottom side and continue to fry the top/ other side too. When fried crisp flip over again, let fry for another minute and then remove and keep it aside on a plate. Continue with remaining pieces if any repeating the same method all over again.
** “Tava Fried Kulitha Ramdana (Horse Gram Idly) Slices” are done and ready. Serve them immediately hot with any coconut chutney of your choice. You can serve it with any pickle, chutney podi/ powder, jam, dips if desired too. I usually serve them either with coconut chutney or gun powder as both taste equally good. Amma always prepared these for evening snack when we came home hungry from school and as children we loved them with tomato ketchup or mixed fruit jam which too taste lovely.
** The added benefits of such recipes are, they turn out to be two in one or at times in 3 or 4 in dishes which means not only does your workload get curtailed, but also you get to enjoy different dishes without repeating the same at a stretch. Children and these days even aged ones are difficult to please and when you give them something different each time, the joy doubles and as everybody enjoys them. These are just small tricks we need to apply to bring about peace and happiness in our home.
