Coffee- Chocolate Flavored Nankhatai/ Narayan Katar/ Eggless Cookies.


“Coffee- Chocolate Flavored Nankhatai/ Narayan Katar/ Eggless Cookies" ... Nankhatai or Narayan Katar as called by Konkanir Saraswats is one of our favorite cookies at home and during Diwali these cookies are a must especially in Mumbai … this time tried them in coffee flavor and they tasted awesome along with a dash of lovely cocoa flavor included … Yummilicious …

** I hardly bake though I love cookies, cakes, buns, croissants etc. in fact all baked goodies are my favorite and I always yearn to bake but somehow lack in confidence. Finally going close to perfection on Nankhatai preparation at home and it feels wonderful not to rush to bakery to bake them. Without running into details of Nankhatai which are cookies prepared without addition of eggs sharing my new version for Diwali this year of 2021.

** Here is my own recipe for “Coffee- Chocolate Flavored Nankhatai/ Narayan Katar/ Eggless Cookies" … My Style ..

** Ingredients :
Ghee/ Toop : 1 cup
Sugar Powder/ Sakhre Pitti/ Pitti Shakhar : 1 heaped cup
Maida/ APF : 2 cups
Chiroti Rava/ Fine Rulav : ½ cup
Besan/ Bengal Gram Flour : 2 tblsp
Rice Flour/ Tandla Pitti : 3 tblsp
Cocoa Powder : 3 tblsp
Instant Coffee Powder : 2 tblsp
Baking Powder : 1 tsp
Baking Soda : ½ tsp
Salt/Namak/Meeta : a small pinch


** Sieve maida, besan, rava, rice flour, instant coffee powder, cocoa powder, baking powder, baking soda and salt together through a fine sieve into a wide bowl or paper. Mix well and keep it aside ready. All the ingredients should be mixed evenly together.

** In a wide stainless steel bowl add ghee, sugar powder and mix well with a fork/ whisk till it turns creamy. This will take about 3-4 minutes. Add all the sieved ingredients and mix well using kneading method/ technique until it combines into a smooth dough.

** Cover with a tight lid and keep this aside for resting for 1 hour. Preheat the oven when you start preparing of the nankhatai. Mix the dough once again and form equal small peda sized round balls and keep them ready aside.

** Place the prepared ball, by flattening it just a little bit on top, on greased tray. You can also place a parchment paper or butter paper on the tray as lining. Place the balls with an inch gap for the sake of even baking or the cookies will flatten out.

** Place tray in preheated oven and bake Nankhatai at 180 deg. C for 12-15 minutes or until done. Baking time differs in each oven depending upon heat temperature etc. So, once it crosses 12 minutes, keep a keen watch to avoid it being burnt.

** When done remove from oven and keep it aside to get completely cooled down. Gently loosen each with a blunt knife and put them into another plate, when sure that it has cooled down from within too, store them in an airtight container.

** Proceed with the remaining dough in the same manner and bake them until all are done, cooled, and ready to be stored. These remain good for over 3-4 weeks easily if carefully handled and stored in airtight containers.

** Children are sure to love this melt in mouth crisp cookies, especially during festive season when they get tired after playing or going about enjoying as it is holidays. A sort of in between snack of these crunchy cookies tastes great with a glass of hot milk/ coffee/ tea.
