** Well, Curds are a part of every south Indians daily diet all through year specially so during summer or October heat. It is very good on tummy and is a must in every home and is consumed by including in different dishes in many ways. Mumbai heat is soaring high and I really feel dizzy when venturing out, not to mention on returning home, I need a good 10 minutes to adjust to the cooler temperature. The heat can be very dangerous, you can cool yourself outwardly by sitting in air conditioned rooms but what about the body from within. Trust me the AC never cools you from within, it is actually the food that you consume that is completely responsible for inner cooling of the body. Though I do include some spice dishes as of now in another few weeks that too will get completely stopped as it is simply not possible to consume spicy, oily or heavy food and still be fit as a fiddle.
** One think that is consistent in our daily diet are curds, come any season, more so during summer. I prefer drinking chilled thinned buttermilk with a dash of lime, asafoetida and a pinch of chat masala. It gives relief to the stomach from all the heavy food eaten at functions. Yes, you heard it right, unfortunately summer is the season of weddings too and it is very unpleasant to wear heavy sarees with jewelries and still stay cool in a rising temperature, not to mention the food. In midst of relatives you forget everything and relish the food only to be in dilemma the next day with stomach upsets or acidity etc. Buttermilk really comes to aid during such times. I forgo food and drink gallons of the same through the day and I am ok in 24 hours. The next day after that too, I keep light with inclusion of either curd rice, curd poha or curd shevai or maybe if too hungry khichidi with curds.
** These are simple tricks one should learn to follow with trial and test on how each one’s body works to stay fit during summer and there is surely no better way than curds and loads of juices to stay hydrated. I am sure every Indian agrees with me with the large benefits of fresh curds. Always use freshly chilled curds and do not use sour ones during summer. For today’s lunch though there were other dishes as it was Hanuman Jayanthi, a hindu festival, where we celebrate the birth of Hanumanji. I also included a curd dish so that the others could be consumed in lesser quantity and the stomach would remain well due to the scorching heat outside. Instead of rice as I had already included rice for food with dal, I prepared curd sevai and served it alongside in the thali. I have already included the same dish but which wheat sevai before and there is no difference except this one is rice sun dried sevai seasoned and used.
** About Rcie Sevai / Tandla Shevai : Rice sevai as you all know is prepared and eaten fresh as well as sun dried for later use too unlike wheat sevai which is only sun-dried and consumed using soaking and seasoning method. It is either prepared at home during summer time or bought from stores and preserved round the year to prepare usli / snack for breakfast or tiffin. It comes in handy when you have guest dropping in suddenly or even for those in between hunger panks, when children have holidays or during monsoon season when due to heavy rains you cannot venture out. In Konkani Saraswat Community most of the households store them in large tins for consumption round the year. I have given in detail to the best of my ability about this Rice sevai in my blog before, I have also included the complete method of preparation with step by step pictures, to which I have enclosed the link below at the bottom of this recipe.
** Here is my simple method of preparing "Seasoned Dahi Rice Shevai-Sun Dried (Sevaiyan/Sevai)" ... a delicious~heart warming dish … My Style to beat the heat ….
** You will need about 5-6 cups of prepared and seasoned sun-dried Rice Sevai for this recipe. Just see to it that the seasoned rice sevai is at room temperature before you add in the curds. And yes, do not forget to add in a few roasted groundnuts to the seasoning while preparing the sevai / shevai, it tastes awesome and children simply love the crunchy nuts, off course elders too.
** Beat 2 cups of chilled curds well to a very smooth consistency and add it to 6 cups of cooled seasoned rice sevai and mix well. The curds should be very chilled as when you add the room temperature sevai it slightly warms up. If you find the texture too thick, you can add in 2-3 tblsp of boiled and cooled water and mix it up to get right consistency.
** Add in half a cup of freshly grated carrots. This is optional and you can leave it out if the same is not available or not to your liking, but I always add grated carrots to dahi bhaat or dahi shevai as it not only adds in nutrition but tastes awesome too, and moreover is the best way to get children along with stubborn elders also to eat veggies.
** You can also garnish the same with a little bit of finely chopped coriander leaves, it not only looks appealing and turns more nutritious but is also coriander leaves impart a flavor of its own and include additional cooling properties. Unfortunately, I did not have fresh ones so I left that step out. Also check the salt and add if need be, you must be careful with salt always, so add on only if needed.
** "Seasoned Dahi Rice Shevai-Sun Dried (Sevaiyan/Sevai)" is done and ready to be served. Serve this cold and enjoy the same with your family and friends. If you want to carry this in lunch box, see to it that the curds are not sour in taste but just perfect or else it will turn too sour in a few hours by the time you are ready to eat it. If you want to have it later on just put it in an air tight container or steel box and put it in the fridge for later use and you can remove and directly serve the same later on.
** Note : If you love to eat spicy dishes, you can serve the Dahi Rice Sevai with any homemade spicy pickle or deep fried~sun dried chillies too or some vodi (Sandige) or papads they simply taste awesome. I usually serve them with vodi and deep fried dried chillies. Do give me a feed back on this, if you loved the recipe, it helps in wanting to do that much more.
** Note : Here is a simple trick if you still want to take "Dahi Rice Sevai" in lunch box or for the matter even curd rice. To prevent the same from turning too sour after a few hours ie during your lunch time in office follow this method and it will be fine to eat without the dish having gone sour. Just beat one cup of thick chilled curds with one cup of thick chilled milk together and add it to the sevai / rice. Mix well, and carry it in a airtight container to office, you will be surprised how well the dish will have settle in a few hours.
