"Naivedyam : Khajoor Appo/ Dates Paniyaram" ... Sharing my Sankashti Chaturthi Prasadam (yesterday's) with all my friends here ... my own mix-n-match recipe with addition of khajooru as sweetener, tastes fantastic ... Stay Blessed- Spread Happiness …..
** Any festival related to Lord Ganesha is mostly observed by preparing Appo/Sweet Paniyarams for Naivedyam/Prasadam as it is considered to be one of Lord’s favorite sweet dish. This sweet Appo / Paniyaram is also a must to be prepared during Ganesh Chaturthi time and I always make it a point to do so. But this one today, I prepared on the ocassion of Sankashti Chaturthi. There are so many variations in making these sweet appos/paniyarams and I have already posted a few of them, sharing a common link below at the bottom of this recipe, you can also use the label or search option for the same. This time I have prepared these using fine bansi rava, chiroti rava / fine rava, bananas etc. while the main sweetener used is Khajoor/Dates. Do try out this variation of preparing sweet Appo, they are lip smacking in taste.
** Here is my recipe for "Khajoor Appo/ Dates Paniyaram" .... My Style ....
** Ingredients :
Barik Lapsi/Bansi Rava/Kanik Rava : 2 cups
Dates/Khajoor : 20-25 seedless or seeds removed.
Chiroti Rava / Fine Rava : 2 cups (Approximately) or as required
Ripe Bananas : 1 large sized. (CavendishBanana)
Thin Poha (Pova)/Beaten Rice/Avalakki : ½ cup
Jaggery/ Goda : About 50 gms cut into small pieces or grated.
Coconut/Soyi/Nariyal : 1 cup freshly grated (White part only)
Salt/Namak : Just a pinch
Cardamom/Ellaichi/Yellu Powder : ½ tsp.
Ghee (Toop) or Oil for deep frying.
** Put the grated coconut, banana cut into pieces in a mixer grinder and grind to a fine paste. Now add in the grated jaggery or cut into small pieces, the dates/khajoor cut into small pieces, poha/beaten rice, barik lapsi / kanik rava along with about ½ to 1 cup of water and grind all to a very smooth paste.
** Note : I have used the Cavendish Bananas which available plenty in Mumbai, you can use any ripe bananas. But if using smaller varieties of bananas to add in more.
** Remove the ground paste into a wide large bowl. Now add in a pinch of salt, cardamom powder and half amount of the chiroti rava mentioned above and mix well. Keep adding in the fine rava and mixing till you get a thick dropping consistency batter. See to it that there are no lumps. Keep this aside for 15-20 mins. Add in the pinch of salt and cardamom powder and mix well. Now the batter is ready to be removed into appos.
** Note : The step of allowing the batter to rest is important. This is done to ensure that the rava absorbs the moisture and gets dunked in it resulting in swelling a little bit. The batter consistency should be thick dropping one. If you find the batter a little bit thinner do not be disheartened. Add in a few teaspoons of rava and gently mix the batter. If you have added in more and the batter has turned out dry on resting add in a little bit of water and mix well. To avoid such mishaps I advice you to add in the slowly little by little so that it does not dry out. Add in only that much rava that gives you right consistency.
** Heat the appo/ paniyaram pan and add in some melted ghee or oil in each of the dents, I have used oil and ghee together in 1:1 proportion. When hot, lower the heat and pour a large tablespoon of the batter into each mold / dent of the pan. Do not add more. It should remain within the inner level of the molds. Cover with a dome shaped lid and cook on slow till crispy on the bottom side.
** Gently run a blunt knife through the rim edging of each appo and loosen them gently with the help of another spoon turn them over / flip each appo and cook uncovered for a few minutes till done. Remove with the help of a spoon / blunt knife and repeat the process with the remaining batter till all the batter has been used up.
** “Khajoor Appo/ Dates Paniyaram” are done and ready to be offered to God for Naivedyam / Prasadam after which you can distribute the same with your family and friends. This is a very easy and delicious recipe of sweet appos with the added goodness of dates/khajoor that can be prepared fast and is a breeze work as there is no heavy grinding involved.
** Do prepare these delicious sweet Appos/ Paniyarams and share them with all your family and friends on any festive occasion. Remember Naivedyams/Prasadam should always be shared to get maximum benefit of Ashirwaad /Blessings. However, you can prepare them on normal days too when you have young children at home as they love munching on sweet appos, so do their friends. Stay Blessed- Spread Happiness.
** Note : You can increase the number of dates/khajoor if you find that the batter is not sweet enough. You can also substitute dates with dates syrup easily available in stores which can just be added after the grinding is done and mix well. Many a times I use dates syrup instead of dates/ khajoor as it is easier to do so.
