Yummilicious ...…
** King Fish / Surmai / Visonu as called in Konkani, is a fish that is universally loved by all fish eaters and it tastes best when fried. We konkani amchies always deep fry it in oil and it is loved and relished by young and old alike. Coming to the method of frying or the masala applied for this fish, I have used the same, which I have posted earlier many times. The only difference in this fish fry is that I have used a grilled pan, which actually helps in using lesser amount of oil. You just need to brush the fish pieces with a light coating of oil, that’s it, so it turns out that much more healthier. I have always wanted to purchase that grilled pan and finally did so 2 yrs back, but somehow never put it much to use. Last year I did make a few grilled fish, patties and potatoes etc.
** This year almost the whole year passed off in back to back health issue, so I kept the thought aside. In Jan. it was my eye surgery due to which I had to take a set back and then in July it was hubby’s, so in order to avoid strains, I stuck to old methods without trying out new things much. I have still to go about learning to use and putting to full use my air fryer too, which I bought in Jan, but could not use the same much. Well, I am sure all that happens is always for our own good and somewhere it is all God’s will and we cannot just do anything about it. Now things hopefully have come back to normalcy, so eager to try out new dishes hopefully in the coming new year.
** Here is my simple method of "Tava Grilled Visonu (King Fish/Surmai)" ... My Style ....
** The recipe remains the same as of the fish fry posted earlier, but I will just mention the same again here. Clean, wash and pat the fish pieces dry. There should be not trace of water left on the fish. I had 4 medium sized pieces of Visonu/King Fish/Surmai fish in all.
** Masala for application : In a small bowl add in 1 tblsp of kashmiri red chilly powder, pinch of hing (asafoetida) powder, pinch of haldi powder, ½ tsp dhania (coriander) powder, salt to taste and 1 tblsp of vinegar. Mix this well into a smooth paste with addition of 1-2 tblsp of water.
** Now apply the paste on both the sides of the fish evenly on a thin layer. Put the masala applied fish pieces in a closed container and put it in the fridge for about 2-3 hours. Remove and keep it ready for 10 minutes.
** Powder for dusting the fish pieces : In a plate add in 2 tblsp of fine rava (chiroti rava), 2 tblsp of rice powder, 1 tsp of kashmri red chilly powder and a pinch of salt. Mix all the ingredients well. Keep this ready before you start grilling the fish.
** Heat the grilled tava on gas till hot, lower the heat to medium, now dust the fish pieces with the prepared powder to evenly coat a thin layer on both sides of the fish. Tap the fish holding it sideways on the tray, doing this removes excess powder on the fish.
** Now slightly smear the tava with oil with a brush and place the fish pieces on the tava and grill for 2-3 minutes on medium heat. Apply oil with a brush on the top side of the fish and then with the help of tongs gently flip over the fish and grill on the other side too for 2-3 minutes.
** When done, remove and keep the fish pieces on an absorbent paper for excess oil to drain off. Do not overcook the fish pieces as they taste best just done perfectly. Fish takes maximum 4-5 minutes to get cooked on medium heat, that’s it.
** If you want a crispier textured exterior on fish pieces, just raise the heat for a minute once the fish is cooked and wait for the fish to get crisp and then flip over and do the same to the other side of the fish too. If you sprinkle a little bit of oil and do the same, you will get a good crust on the fish and deep grill cuts too.
** "Tava Grilled Visonu (King Fish/Surmai)" is done and ready to be served. Serve them hot immediately as a side dish with other dishes or as an starter at parties or get together. They taste delicious served along with any dishes of your choice. For a fish eater it is one of the best fish relished as a starter with some hot soup or drinks. ** Note : You can increase or decrease the amount of red chilly powder depending upon individual preference in your home. I have kept the fish medium spicy, as though a decade back we would love to have it spicier now we do not do so for health issues. Too much spice is considered not good for health as it increases the acid level in the body.
** You can try the same masala and method for any fish of your choice and also deep fry or shallow fry the same, they turn very good too. But if you are using the grill method do use a flat shaped fish for easier cooking as rounded edges sometimes stay under cooked as heat does not reach evenly to the entire fish.
