Jeevi Tori (Fresh Pigeon Peas) Ambata (Curry).


"Jeevi Tori~Batato~Gulla Ambata/Fresh Pigeon Peas~Potato ~Brinjal Curry Seasoned with Onions" ... Fresh tori is still in season, so enjoy this delicious amchi dish that goes very well with Ukda Rice/Rice or even chapati ….. 

** The season of pigeon peas ie jeevi tori as called in Konkani is almost coming to an end. Somehow this time I could not prepare dishes using the same as I was too occupied in other activities and shelling of the peas is really a pain unlike green peas and I was always busy to do the same. But fresh pigeon peas are very tasty and many dishes prepared out of the same turn out tasty too, so finally I bought some to prepare some of my favorite dishes. Though simple upkari is my favorite with fresh pigeon peas, this time I have prepared ambata a delicious dish from Konkani Saraswat Cuisine. Ambat is a medium spicy curry that tastes delicious when served hot with rice. I have included many ambat recipes before in the blog, so I will not run into details about the meaning of ambata again, but will add in a common link at the bottom of this recipe, please do click on the link for more types of ambat recipe and information. This particular ambata is prepared with fresh green pigeon peas which you can see on the picture along with potatoes and brinjal. And yes ambat is curry that is by large seasoned with crispy fried finely chopped onions that imparts an awesome taste and aroma to the dish. Do try this dish out if the fresh pigeon peas are available to you. You can also prepare the same with dried one’s after soaking overnight and pressure cooking them while rest of the recipe remains same. 

** Here is my simple recipe for "Jeevi Tori~Batato~Gulla Ambata/Fresh Pigeon Peas~Potato ~Brinjal Curry Seasoned with Onions" …. Konkani Saraswat Style … 

** Wash and add in the shelled fresh green pigeon peas / jeevi tori in pressure cooker with adequate amount of water, Say about 3 cups of the peas, to which the water level in the cooker should be say about an inch above the level of peas. Pressure cook the peas to 2 whistles and allow the pressure to fall on its own. 

** Peel off the skin, wash and add one large sized potato cut into 2 inch sized cubes to the cooker in which the pigeon peas are cooked. Do not remove the peas out add in some more of water and pressure cook together to one whistle. Let the pressure fall on its own while you grind the masala simultaneously. 

** Masala to be ground : Add in one heaped cup of fresh coconut gratings along with 6-8 kashmiri red chillies and a small marble sized tamarind in a mixer grinder. Add in a little bit of water and grind to a very smooth paste. You can use the peas cooked water while grinding, the paste should be fine. Keep this ready aside. 

** Remove and put the cooked ingredients in a wide stainless steel vessel along with about 100 gms of washed and cut into 2 inch cubes of green brinjal and bring to a boil adding water if necessary and cook till the brinjal is almost done. Add in the ground masala along with salt to taste and mix well. Add in water to bring it to a gravy consistency. Bring to a boil and then simmer for 5 minutes. 

** For Tempering : Add one medium sized finely chopped onion along with 2 tblsp of oil in a small pan and fry on medium heat till they turn brown in color. Remove and pour this over the simmering curry. Remove the curry from fire and keep it covered aside for a good 20 minutes for the flavors to seep into the curry. 

** "Jeevi Tori~Batato~Gulla Ambata/Fresh Pigeon Peas~Potato ~Brinjal Curry Seasoned with Onions" is done and ready to be served. Tastes best when served with Red Boiled Rice / Ukde SheetHa or any steamed rice. You can serve it with roti / chapatti / parathas too in which case keep the gravy slightly thicker for better taste and easier consumption. Enjoy this delicious curry with your family and friends.
