Dosa prepared with left over panpole batter by adding rava, besan, jawari, nachni, grated cucumber and finely chopped methi leaves and served with Amla green chilli pickle....
I had around 2 cups of panpole batter left. So I prepared this Dosa by adding some different flours, methi leaves and cucumber to it.
For 2 cups of panpole batter add 1 cup of very fine rava (chiroti rava), ½ cup of Jawari flour, ½ cup of Nachni flour, ¼ cup besan (Chana dal flour) and mix well. Add in salt to taste. Now add one cup of picked, washed and finely chopped methi leaves, 1 medium size grated cucumber, 8-10 curry leaves chopped fine, 4-5 green chillies also chopped finely and 1 tblsp of finely grated ginger. Mix well and leave the batter aside for 10-15 minutes. This is to ensure that the rava swells and then you can add in water to the batter to bring it to a thick dosa conistency.
Heat the dosa pan, when hot lower heat, spread a bit of oil and gently rub with tissue paper evebly so that the pan has a film of oil on it. Pour about one cup of the batter in the center with the help of a round spatula and spread gently into a round circle of around 8-10 inches diameter. Sprinkle some oil on top of the dosa. When done on bottom side and the top side is firm when touching flip it over and cook for a minute or two. Remove and serve with chutney / fresh butter or any pickle.
