My Thali 60.


My Thali 60. or Should I say Green Thali …. “Marala Panna Podi (Colocasia Leaves Rolls Fried), Gosale Upkari (Ridge Gourd Bhaji), Gosale Shire Gooli/Chutney (Ridge Gourd Peels Chutney), Dalitoy (Spiced Tuvar Dal), SheetHa (Rice)” … Delicious and simple lunch … Yummy Yumz … 

** Again a simple Thali for all my friends here. The highlight of this thali is Marala panna podi (Colocasia Leaves Rolls sliced and fried). Marala paan is not exactly the cocolasia leaves / alu vadi patta we use for making patrade, these are slightly different in texture and slight variation in looks etc. and are available by and large during monsoon season only. It is difficult to get them in Mumbai, at least I have not come across them, but recently my sister who stays in Lonavala, a hill station near Mumbai found them available there are passed on the same to me. Thanks to her I got to relish these fries. The same can be prepared using colocasia leaves to but somehow the crispiness and the taste varies a little bit, so if you have access to these leaves Plz. do try them out, I have shared the link and it does have pictures of the leaf for you to get a better understanding. 

** The other dish in this thali is gosale shire gooli / ridge gourd peel chutney. This is also is a traditional dish from Konakani Saraswat’s Cusine like the above podi. Here the ridge portion peel only is thinly scraped fried with some spices and coconut and prepared into chutney. The chutney can be prepared in two ways one without the addition of water (Just little bit) the other with water like the ones we have for dosa. The one without addition of water is difficult to be ground and we use mostly grinding stone for the same. It can be rolled into a tight ball, as you can see in the picture. This one is much tastier than the one that is with addition of water. Again gooli remains good for 3-4 days if refrigerated immediately in a airtight tin, while the other one will remain good for only say 30-36 hours. In my home we love the gooli very much which goes very well with peja.

Please do excuse for the inconvenience, but I am sure all of you will agree with me that it is stupidity to repeat the recipe over and over again unless there are some adaption’s or changes made. Once again I want to encourage all my friends, who are still hesitating to try out cooking, to take it as a challenge and in no time you will feel proud of yourself when you excel in it. One should never have the attitude as to why they should cook for others etc. Ask all members in the family to learn be it any gender. You should teach your children both boys and girls to cook. It is very important just like education to stand on one’s own in every field without being dependent on others.

5. “Cooking Rice Starch Free / Vanu ghalnu SheetHa” … Rice cooked and the water is drained off to remove excess starch. The rice remains well cooked without sticking to each other … Do try this formula / method of cooking as it is very healthy.
